Get your Southern BBQ fix with this healthy-ish, loaded Barbecue Chicken Stuffed Baked Potato that’s easy enough to pull together for a relaxing weeknight meal.
Were you one of the many who were “lucky” enough to be caught up in Winter Storm Jonas last weekend?
“Storm of the century” they called it. Now while I think this century is still pretty young to determine if that statement is true, it was quite a storm! More than 2 feet of snow was dumped all over New York City in a 24 hour period. That’s seriously crazy and I know other parts of the east coast was hit with more than that.
What a way to bring in the first snow of the season! I do love the first snowfall though, there’s something magical, peaceful and beautiful about it all. The next day – yeah I’m pretty much over it at that point. The gorgeous snow covered city turns into a slushy, dirty, icy mess with piles of snow taller than most people.
Still though, I won’t complain too much about it all because I’m escaping from the snow, grit and cold to Charleston, SC for 7 days next to eat, shop and better my photography skills. Bring on the spring-like temperatures!
Interestingly enough it was a previous visit to Charleston that inspired this dish today. Back when I did the corporate job thing, I traveled down to Charleston a few times a year. My trips were short and since I was never downtown, I ended up eating at the same places on almost every trip, one of those was a barbecue joint. You can never go wrong with BBQ, especially in the south. On the lunch menu, a stuffed baked potato loaded up with pulled pork caught me eye.
Isn’t there some quote about things being bigger and better in the South? Well it might have to do with Texas but it definitely applied to that lunch. It was huge and delicious but not as healthy as one would think a baked potato lunch should be.
That lunch was loaded up with pulled pork, butter, cheese, sour cream, bacon – basically the works! I knew I could do better, still be delicious but just a tad bit smaller. Not to mention completely doable for a weeknight meal.
First up is the potato – Idaho® potatoes are a staple at my house year round. They are a healthy addition to any meal, loaded up with potassium, vitamin B6 to help your body metabolize protein and carbs and it provides 45% of your daily needed intake of vitamin C!
I tossed some Russet Burbank potatoes in the oven to roast and got working on the rest of the meal. While I love pulled pork, it takes some advanced planning, so it was subbed out with spiced up chicken thighs that finishes cooking before your potato is done roasting in the oven. We of course need some of “the works” but paired down just slightly to help us stay on those new year healthy eating goals.
The best part of it all is that dinner can be done in a flash! The longest part is roasting up those potatoes and I suggest just tossing them in the oven when you get home from work for a head start on dinner.

- 4 large Russet Burbank Idaho® Potatoes, scrubbed
- 1 1/2 pounds skinless, boneless chicken thighs
- 2 teaspoons ground cumin
- 2 teaspoons chili powder
- 1 teaspoon kosher salt
- 1 teaspoon paprika
- 1 teaspoon ground black pepper
- 1/2 teaspoon garlic powder
- 1/2 teaspoon onion powder
- 1/4 teaspoon cayenne pepper
- 1 1/2 cups barbecue sauce (homemade or store bought)
- 1 cup shredded cheddar cheese
- chopped scallions
- Heat your oven to 400 degrees F. and using the tines of your fork poke holes all over the potatoes. Bake the potatoes for about 45 minutes to 1 hour until they are tender. Remove from the oven once finished.
- In a small bowl combine the cumin, chili, salt, paprika, black pepper, garlic powder, onion powder and cayenne pepper.
- Wash and dry the chicken thighs and rub all over with the spice mix.
- Place the seasoned chicken on a rimmed baking sheet covered with parchment paper and bake in the heated 400 degree oven for 15-20 minutes or until the chicken is no longer pink throughout.
- Let cool for about 10 minutes and shred (tip for easy shredding, place the chicken in your stand mixer fitted with the paddle and mix on medium speed for 2-3 minutes).
- Toss the chicken with barbecue sauce and set aside.
- Split open the cooked baked potatoes, and stuff about 1 cup of chicken inside the potato. Repeat with the remaining potatoes and then top with 1/4 cup of cheddar cheese on each potato and chopped scallions.

You could stuff a shoe with bbq chicken and I would be all over it! (Ok maybe not a shoe but you know what I mean…haha) This looks like such a comforting dish…yum!

I made this recipe in the slow cooker today! Put raw chicken breasts and bbq sauce in the bottom of the slow cooker, then put foil wrapped potatoes on top so they will all cook together. I work 10hr days and it is over 90 here in NC right now, so anything to keep from heating my oven up. When I get home I will remove the potatoes, shred the chicken, then serve with your suggested toppings. Can’t wait! Thanks so much for the recipe!
