Chorizo Scotch Eggs #SundaySupper

Do you have a favorite childhood recipe that you secretly love to recreate at home every now and then?  Maybe a little tuna noodle casserole or perhaps a Jello salad?  #SundaySupper is going retro today  and to be honest, out of all the themes we’ve hosted this was perhaps one of the most challenging ones for me topic-wise. 

You see my mom didn’t really cook “retro-recipes.” I suppose I could have made her meatloaf (which was really good!) or some spaghetti and meatballs, but none of that actually felt old fashion to me.  Plus the only time Jello was around was when someone was sick and it was just the red kind getting made, no additions.

I honestly have to give my mom props, she kept up with the cooking times, her Gourmet subscription never ran out and there were always saved issues of Cooks Illustrated littered about.   Now, I can’t say if my brothers growing up in the 70’s got to enjoy the same food that I did in the 80’s in 90’s but life is a little different when you have one kid to cook for instead of 3 growing boys!

Interwebs searching brought us #SundaySupper members stuck for ideas a website that listed retro food recipes.  I was actually thrilled to see Scotch Eggs on there.  It’s had a resurgence in the last few years, but this dish has a long culinary history.  Plus, I had wanted to make them for awhile.

I “Little Red Kitchenized” the traditional recipe by swapping out Italian sausage for chorizo and baked my eggs instead of frying them.  Don’t get me wrong, these are still rich and seriously filling.  A perfect meal to start your day, or get you through the rest of the afternoon!

Chorizo Scotch Eggs #SundaySupper
Save Recipe


  • 6 large eggs
  • 1lb fresh chorizo (if in links, remove casing)
  • 1 cup all-purpose flour
  • 1 egg, beaten with 1 tablespoon water
  • 1 1/2 cups crushed butter flavored crackers (like Ritz)
  • 3 tablespoons unsalted butter, melted


  1. In a medium pot, place your eggs and carefully fill with cold water until it covers them by 1 inch.
  2. Cover, bring to a boil and then turn off the heat and let sit for 3 minutes. Drain and run under cold water. Once cool enough, carefully peel the eggs and set aside.
  3. While the eggs are boiling, divide the chorizo into 6 batches and form into little bowls for the eggs to sit in.
  4. Set up your breading station, by placing the flour, egg wash and crackers in three separate shallow bowls. Mix the melted butter with the crackers at this time.
  5. Set up a baking sheet lined with parchment paper and a cooling rack fitted on top.
  6. Pre-heat your oven to 425 degrees.
  7. To form your Scotch egg, take a soft boiled egg and wrap the chorizo around the egg, sealing the edges. I find it helps to enclose the egg around both your hands as it gets a little slippery.
  8. Roll the chorizo covered egg in flour, then dip it in the egg and finally cover it with the crackers. Transfer to the prepared baking sheet.
  9. Another option is to wrap all the eggs in the chorizo and then bread.
  10. Bake for 20-25 minutes, until the chorizo is cooked through and the outside is crisp and brown.
  11. Remove from oven and serve hot or at room temperature with spicy mustard.

    I can totally relate to getting jello when you’re sick! Did your mom let you drink some warm too? That was my favorite way. These eggs look amazing–think I need to pick up some chorizo this week!
