Take a look into your pantry and fridge, now pull out five items and make a meal. What should be a simple challenge to throw together an easy meal can sometimes be an overwhelming decision. Why is it that we feel this need to include a million ingredients to make dinner or even breakfast? Certainly some recipes need more than others but for example all a roast chicken needs to make it shine is lemon, an herb, some butter, salt and pepper. Two of those ingredients don’t even count! Good thing #SundaySupper challenged us all to make meals utilizing 5 ingredients or less with salt, pepper and oil as freebies – because let’s be honest any meal would be bland without those.
I am most certainly guilty of pulling everything out of my pantry or fridge to make dinner but I blame it on my need to make everything from scratch.
However the one thing I really took away from our trip to Italy was that a good meal doesn’t need a lot of stuff. Take the dish cacio e pepe, all you need is some spaghetti, cheese, pepper and starchy water from the pasta to make a flavorful, creamy, peppery meal. The marina sauces aren’t loaded down with garlic and onions, it’s just about the tomatoes in Italy.
When you use the best and freshest ingredients, you don’t need a million things to cover it up.
Take this tuna, burrata and black olive salad, I ordered it by accident while out to lunch. I saw burrata and black olives and didn’t care so much about the third ingredient listed.
Burrata – if you are unfamiliar – is a glorious, creamy, fresh cheese made from the scraps of mozzarella di bufala. The curds are pulled together to form a pouch, which is then filled with cream and stringy bits of curd. It has a slight sour taste from the buffalo milk used to make it but that rich creamy center is divine.
Back to the salad, what arrived was tender leaves of lettuce with our burrata, black olives and tuna! Of course I dug in and loved every bite. I was never one to pair tuna with cheese but this combination just works. The oil packed canned tuna that was used brought so much flavor to such a simple salad that I couldn’t wait to come home and make it again.
Ingredients
- 1 small head, butter or red leaf lettuce
- 1 5oz can oil packed tuna
- 1 small ball burrata cheese
- 1 can jumbo pitted ripe (black) olives (I prefer the Italian brand Cento)
- extra virgin olive oil
- balsamic vinegar
Instructions
- Tear the lettuce leaves and divide it between two salad bowls.
- Drain the tuna slightly, with a fork flake it and divide between the two bowls.
- Tear the burrata over the bowls into small pieces and top with black olives (you will use about half the can, save the rest for another use).
- Drizzle with a touch of extra virgin olive oil and balsamic vinegar.
- Serve immediately with some crusty bread on the side.

I love how travelling can re-inspire your cooking. Every time to go back to Italy I am amazed at how different the Italian is in other areas of the world. True Italian food is very simple and focused of few ingredients. This looks like a lovely salad.

I will try this! I’ve recently become a “tuna snob” and will only eat the stuff that’s in a jar, instead of the can. And, I have one in my pantry right now.

I have never heard of Burrata. It sounds so good.
You had me at burrata! Great idea to mix it with tuna and black olives.
It is crazy how sometimes cooking with less ingredients seems so much harder than more. I love going back to basics though and just choosing a few really good quality ingredients to make a simple, flavorful meal. You know I’m on my journey to start loving olives, so I’ll have to give this one a try!

I’ve never tried bur rata so will have to give it a try. We often do dinners like that, pulling things out of the cupboard and coming up with something really great that we don’t regularly do. It’s the moment of inspiration.
