You guys, it’s officially summer fruit season and I am obsessed with a capital O.

Last week I stocked up my fridge with pounds of cherries, strawberries, blueberries and raspberries and I’ve been eating them like they are going out of style.  There are truly very few foods that can curb my need for that after dinner desire for something sweet like summer fruit.

You know what I’m talking about here, sweet strawberries, super cold and juicy watermelon and cherries.  Oh man, if I eat any more cherries I might turn into one!  I may hate the heat and the humidity but I still wait (impatiently, I might add) for June  to arrive and all my favorite fruits.

While they are perfectly poppable as a snack, in my morning yogurt or in the evening, my brain churns at the ways incorporate them into every type of cuisine.  Cakes, pies, sauces, ice cream – you name but really cocktails do summer fruit the best justice in my book.

When the fruit is perfectly ripe, you don’t need much for that summer sipper to enjoy in your backyard or at summer party.  Back in the day fruit cocktails were always synonymous with margaritas or daiquiris but we’ve grown up and so should are cocktails.

Meet the Raspberry Mint Tequila Smash aka your grown up margarita also otherwise known as my cocktail love.

I love smash cocktails.  Filled up with fruit, a little sweetener, some citrus, herbs and your alcohol of choice and you’re ready to go.  Normally I venture towards bourbon in mine but the summer called for something a little lighter and tequila did the trick.  In absolutely no time at all you’ve smashed your drink and you are ready to sip.   Make this for a crowd or just for yourself at the end of a long day.
