Flaky pastry, paired with bourbon spiked jam and fresh blackberries make Bourbon Blackberry Jam Bars the perfect picnic treat!
I recently started watching the Great British Bake Off on Netflix last week and you guys, oh em gee I am o.b.s.e.s.s.e.d. with a capital O.
I stopped watching Food Network competition shows a long time ago because they predictable, boring and slightly annoying. This show is none of that.
Have you watched it yet? You need to do so immediately and I’m going to tell you why. For starters they are British, with a few Scots tossed in, the accents alone are just pleasing to listen to. Next up, while it’s a competition, you get the feeling that all the amateur bakers really enjoy each others company and are friends throughout the taping. They help each other out if they have the time to do so and no one really is trying to sabotage one another (although there was one ice cream incident but it certainly looked more accidental than malicious).
Speaking of the bakers, these people are supposed to be amateurs but what they bake up would certainly secure them jobs in any pastry shops in my opinion. You’ve got spun sugar, caramel molds, 3-D biscuit (that’s cookie to us Americans ????) designs, and cakes and pastries decorated by someone with years of experience.
I couldn’t do it. I mean with practice perhaps but when I bake for fun I’m not spinning sugar – hot caramel hurts when it hits your skin!
So yes, I love the show and I’m loving my education in British desserts too. Perfect way to get ready for my vacation to London in a few weeks!
I would go on about how much I love the show and how I need to find the rest of the seasons beyond the one currently streaming (why Netflix, why?!?!). However I have my own dessert to present to.
I would think Mary Berry would enjoy these Bourbon Blackberry Jam Bars. You’ve got a layer of flaky shortbread pastry, topped with bourbon spiked blackberry jam and then to finish it off a row of gorgeous fresh blackberries.
I’m sure I’d get docked for not making my own blackberry jam but perhaps the punch of bourbon you get in each bite would distract Mary Berry, she does seem fond of the spiked desserts! Not to mention you won’t need hours on end to pull this dessert together! Turn on episode of The Great British Bake Off and by the time it’s over, these bars will be finished too!
