Yesterday I gave you the brunch cocktails, today it’s all about the brunch food!

Who doesn’t love the perfect light and fluffy pancake right? It always seem impossible to replicate at home though, dinners and restaurants have this magical power to bring towering plates of pancakes to you each and every time.

Guess what? Next time that pancake craving hits, you don’t have to go out, you can get that tower of pancakes right at home.  The secret ingredient was so obvious, I can’t believe I actually didn’t try it before.

Are you ready for it? It’s seltzer water!

I figured, it was the secret to the light and fluffy matzo balls that my mom made every Passover, so why couldn’t it work here? Turns out, it sure does!

Plus if you know me, it’s likely there’s a bottle of seltzer hanging around.  I don’t drink soda, I haven’t in years but I love the fizz and bubbles from seltzer.  It is the perfect thirst quencher on a hot day or even when that old soda craving comes back to haunt me every now and then.

My go to? Vintage Seltzer, always.  It’s what I grew up with and in my opinion the best.  It’s sort of funny, I kind of always equated Vintage with being the New York brand growing up.  I have no idea why, probably because there were cases of it stored in our garage ready to go growing up.  Living in an apartment, sadly I don’t have room to store a case, so I buy liters at a time – which is essentially a serving to me!  Glasses? Who needs them, I drink straight from the bottle (should I admit that? Don’t drink my Vintage Seltzer!).

In all seriousness though, Vintage Seltzer is made up of two ingredients, carbonated water and natural flavors.  Those natural flavors are either an essence, extract or oil from the actual fruit that’s listed on the back.  There are no artificial flavors, no dyes, colors or high-fructose corn syrup.  All natural and it’s more than the plain flavor.

So while I used the original flavor for my pancakes, you could totally use one of the 10 flavors in the batter for yours.  I think the Pomegranate flavor would give such a lovely extra boost to these pancakes.

Speaking of which, look at them! See what the bubbles from the seltzer does? I know there’s science between the reaction of the seltzer and the baking powder that causes it to puff up but it’s breakfast time and we just want pancakes!

Pancakes topped with fresh pomegranate seeds and chocolate chips! You get the sweet and tart from this mix and a gorgeous color that’s just perfect for a special morning!

Save Recipe

Ingredients

  • 2 cups unbleached all-purpose flour
  • 2 tablespoons cane sugar
  • 2 teaspoons baking powder
  • 1/2 teaspoon salt
  • 3/4 cup Greek yogurt
  • 2 large eggs
  • 1 cup seltzer water (such as Vintage)
  • 3/4 cup pomegranate arils, plus extra for topping
  • 1/2 cup semi-sweet chocolate chips, plus extra for topping

Instructions

  1. In a medium bowl combine the flour, sugar, baking powder and salt.
  2. In a small bowl whisk together the Greek yogurt, eggs and seltzer water. Pour the liquid ingredients into the dry and mix thoroughly until it's incorporated together.
  3. Stir in the pomegranate arils and chocolate chips.
  4. Using a griddle or non-stick frying pan over medium heat, add about 1 tablespoon of butter and let melt.
  5. Pour 1/2 cup of pancake batter onto to the pan and cook for about 2-3 minutes or until golden brown on the bottom and then flip to cook for another 2 minutes. Continue with the rest of the batter, making sure not to crowd the pan when you cook the pancakes.
  6. Keep the pancakes warm either under foil on a plate or in an oven on a baking sheet heated to 200 degrees F.
  7. Serve the pancakes with extra chocolate chips and pomegranates on top.

    Whoa I didn’t know seltzer made extra fluffy pancakes! I’ll have to tell my dad the secret because he usually asks me how he can make his pancakes fluffier. Never would have thought to add pomegranate and chocolate chips together. I’ll try that next time I buy a pom.
