Steamed Clams with Chorizo and Tomatoes

On your next date night think about spending it at home with a glass of wine, Netflix on the television and big bowls of Steamed Clams with Chorizo and Tomatoes

Do you still go on date nights with your significant other?

After nearly 12 years of togetherness, Braden and I still make a point to have date nights or days every week.  It’s important to us to have that quality time doing something fun together.  Sometimes though we get lazy – a long week, a rainy day or simply no desire to go anywhere keeps inside.  That doesn’t mean date night has to end, in fact some of our best date nights happen at home.

A delicious dinner and a great movie is really all I need for a good night.  Oh and being able to watch it in my pajamas!

Let’s talk about that dinner at home, the key to a good date night in is making something a notch up from your normal weeknight meal.  This dinner doesn’t have to take forever, it doesn’t have to involve 10 million ingredients but it should be special, it should take you away for a moment.

For me I always turn to a big bowl of clams, I love the briny taste and sopping up the flavorful broth with plenty of crusty bread. Depending on what you add it can take you away to Spain, to France or to Italy.  Today’s trip was taking me to Spain with cured chorizo, tomatoes and Rueda Verdejo wine from Ribera y Rueda regions in Spain.

Rueda Verdejo is a bright, crisp wine with vibrant fruit and a complex taste – perfect not only for sipping alongside this meal but for splashing a bit into the pot to steam your clams.  It’s the Julia Child method of cooking, a glass for yourself and a bit for the meal.  At least that’s how I look at it!

Both the Tempranillo and Verdejo wines though make you want to say si to your date night at home.  We both love wine and have a nice collection at home and it was such a pleasure to try wines from the heart of Spain without having to get on a plane.  Located just about an hour away from Madrid, winemakers from Ribera and Rueda have cultivated what’s new and what’s next in every vineyard and vintage they produce.

Whether you’re a white or a red fan say si to all, as I think it’s a perfect wine for the summer!

Ingredients

  • 3 ounces cured chorizo, cut into 1/4 inch dice
  • 1 medium yellow onion, thinly sliced
  • 1 large garlic clove, thinly sliced
  • 1 pint cherry tomatoes, halved
  • kosher salt
  • black pepper
  • 3/4 cup dry white wine (such as Rueda Verdejo)
  • 24 littleneck or cherrystone clams, scrubbed and soaked to remove grit
  • parsley for garnish

Instructions

  1. In a large stock pot over medium heat at about 1 tablespoon of grapeseed or avocado oil and add the chorizo. Cook for about 5-7 minutes or until the chorizo starts to release some of it's oil and brown, stirring often.
  2. Add the onions and cook until soft, stirring to make sure they don't burn. Stir in the garlic and tomatoes and season with salt and pepper to taste. Pour in 1/4 cup of the wine and cook the tomatoes until they begin to soften about 6-8 minutes.
  3. Once the tomatoes are soft and there's some liquid in the pan, add your cleaned clams and the remaining wine.
  4. Cover the pot and steam for 5-10 minutes. Remove open clams and divide between two bowls, if some clams are stubborn to open give them a little nudge they might pop open. If they don't, dispose as the clam is dead.
  5. Ladle the broth over the clams and serve with crusty bread and a glass of wine.

During the school year Ron and I have a date every Thursday; I absolutely agree with you that it is so important to have quality couple time.

Your clams with chorizo on tomatoes on the other hand would be a perfect family night meal in my house. Our kids – and us as well – love clams and can work our way easily through a couple of pounds. I love the addition of chorizo to your recipe.

Date nights are the best, and I love them even more when I can curl up on the couch with husband, a good meal and a movie. These clams could definitely be a part of that!
