Can you believe Passover is tomorrow?

I feel like just yesterday we were celebrating winter holidays and now it’s the spring ones, although it sure does still feel like winter out there! I’m sure at this point your home is cleaned and meal prep has already begun but did you forget about dessert again?

Passover always feels like one of those holidays where the dessert is a little meh.  Baked goods for a holiday where leavened treats are strictly forbidden take some creativity of sorts. If it isn’t your strong area in the kitchen the end of the meal ends up with a serving of fruit salad and boxed passover candies.  Maybe if you’re lucky someone made a Passover cake.  Maybe.

Matzah crunch is nothing new to the Passover dessert table but it’s a little reminder today that’s it there and it’s freaking delicious and you need to make it.

I know you can spare a couple of matzahs from the 5 pounds you bought from the store to get you through the week.  Plus it only takes a few minutes of actual prep time to make, with the rest hands off to set.

The best part is, this makes enough to snack on all week long, assuming you don’t keep going back to snag a piece of it.  I know I can’t resist it.

Passover not your holiday? Doesn’t mean you can’t make it and you SHOULD. Ever have chocolate and toffee covered ritz crackers or saltines?  It’s the same thing but for some reason the matzah works just that much better.  There’s a magical combination of that buttery brown sugar toffee sauce baked on top that gives the matzah the perfect crunch and the chocolate is the kiss that says you can’t resist me.

Matzah Toffee Pecan Crunch

Ingredients

  • 1 1/2 cups light brown sugar, packed
  • 1 cup unsalted butter (sub soy-free margarine to keep it parve during Passover)
  • 1 teaspoon pure vanilla extract
  • 1/4 teaspoon salt
  • 6 matzahs
  • 2 1/2 cups semi-sweet chocolate chips
  • 1 cup toasted pecans, chopped
  • coarse sea salt

Instructions

  1. In a medium sauce pan over medium heat melt the brown sugar and butter together until the sugar is dissolved and it comes to a simmer, about 10 minutes. Stir in the vanilla extract and salt.
  2. Heat your oven to 350 degree F. and line 2 rimmed baking sheets with parchment paper and divide the matzahs between the 2 sheets.
  3. Carefully pour the toffee sauce over the matzahs, using a silicone spatula to spread it evenly across then so the surface is completely covered.
  4. Bake for 10-12 minutes or until the toffee is golden brown and has a cooked looked to it. Check often to make sure it doesn't start to burn.
  5. Remove from the oven and sprinkle the chocolate chips over the matzah. Let sit for 2-3 minutes to melt and then using an off-set spatula smooth the melted chocolate across the top.
  6. Sprinkle with the chopped pecans and some coarse sea salt.
  7. Place in a cool spot to dry completely for about 2 hours.
  8. Once the chocolate is completely set use a sharp knife to cut the matzah into pieces and store in an airtight container.

    I seriously can’t believe it’s already April. I’m glad because that means summer’s almost here and so is my vacation (I’m going to Hawaii in a few weeks and I can’t.freaking.wait). Buuuuuuut I have a few very stressful work things coming up in June and July, which I’m NOT looking forward to. Sigh. A few sheets of your delicious matzah toffee pecan crunch would make me feel a lot better! This looks awesome, Susan! What an awesome way to use matzah.
