Did you really think I gave up on my good eating routine when I shared that hearty cheese-lovers fest of a mac and cheese the other day?
Puh-lease. I said right from the start that curbing cravings is part of the plan. The entire reason why diets have failed for me over the years is because they are too strict, I get unhappy, bored and end up cheating and feeling guilty about what I’ve done. That is no way to live your life and you shouldn’t be a slave to each and every piece of food you put in your body.
The key is smart choices, start in the morning and work your way up to lunch – which helps if you pack it at home and bring it with you to work or while out running errands.
If you took a peek in my lunch bag there’s a pretty good chance you are going to spot a can of tuna, tuna salad or a sandwich in there. It’s been a staple of my life since I was a little kid – oh yes, I was the one with that tuna sandwich at lunch stinking up the place!
Our fridge and pantry were always stocked with cans, the little ones made the perfect-sized lunch for one, while the bigger ones were great to feed a few of us for weekend lunch or an easy dinner. You see, I think mom secretly knew all the healthly fat, vitamins and minerals in Bumble Bee and that’s why she kept making those sandwiches all those years.
Oh and p.s. Bumble Bee comes in pouches too, perfect when on the go and you don’t exactly have a can opener handy.
However our sandwiches were boring, it was just the tuna and mayo and maybe on a good day some chopped celery.
It’s a classic but all that mayonnaise isn’t exactly good for you. When I want that classic taste I swap it out for greek yogurt but what I really love these days is the taste of the tuna on it’s own with marinated vegetables and olives. Suddenly you don’t feel like a little kid anymore when you take a bite but now eating a sandwich that’s meant for a grown up!
The artichokes, peppers and olives add a fresh taste to the tuna finished off with the brightness of lemon juice. You almost wish you were floating in the Mediterranean while enjoying it.
