During the busy holiday season it’s easy to overlook a healthy meal.  This Shrimp, Kale and Red Chard Stir Fry comes together in 15 minutes and helps balance out all those cookies you’ve been eating!

If you’ve read this blog long enough or even if you know me in real life, you know that I don’t do shortcuts.

Yes, I’ll use canned tomatoes or boxed stock but the type I’m picking is going to be either organic or imported with no added ingredients or preservatives beyond what needs to be in there.   I love to cook, so what should I take the easy way out with boxed stuff and goods that have been sitting around for who knows how long?

Here’s my secret truth though, not all shortcuts are bad when the pre-packed item contains all fresh vegetables.

Eat Smart Salad and Stir Fry Kits

December is a busy time of year of all of us and I’m having my busiest season yet.  I’m working 23 straight days this month and the only thing I’m really concerned about right now is whether or not I can manage a quick, yet healthy home cooked meal at the end of the day.

Sure I treasure my leisurely trips to the farmers market where I can hand pick everything I want, but I don’t have time for that right now.  Luckily, I had the opportunity to try out Eat Smart Salad and Stir Fry Kits and let me tell you, these kits are a savior for me this month.

These kits are more than your standard lettuce in a bag type kits.  Everything is fresh, bright and very green and it’s refreshing to have vegetables other than romaine or iceberg lettuce end up in my salad.   Since I love hearty greens like kale and chard, their kale and red chard stir fry was right up my alley with carrots, broccoli and snow peas thrown in to balance this vegetable party out.

A couple of the other kits have combinations of ingredients like kale, green cabbage, broccoli, Brussels sprouts, chicory, and/or quinoa and toppings like roasted pumpkin seeds, almonds or dried cranberries.   All sounds pretty good for a quick and healthy meal right?

So after a long day (or rather a quick lunch before a long night working), I tossed some shrimp into my wok for 5 minutes, this stir fry kit in for about 3-4 minutes and magically a meal was on my plate 10 minutes later!

Shrimp, Kale and Red Chard Stir Fry
Save Recipe

Ingredients

  • 3/4lb large shrimp, peeled and deveined
  • 1/2 tablespoon cornstarch
  • 1/2 tablespoon grapeseed or avocado oil
  • 1 bag Eat Smart Kale and Red Chard Stir Fry Kit

Instructions

  1. In a medium bowl toss the shrimp with the cornstarch, making sure it's completely coated.
  2. Over medium heat, drizzle the oil in a wok or saute pan and cook the shrimp for 3-4 minutes or until it's pink and opaque throughout. Remove from the wok.
  3. Add 1 tablespoon of water and the contents of the kale and red chard stir fry kit. Stir and cook until the greens start to wilt slightly, about 5 minutes.
  4. Return the shrimp to the wok and if using add the included stir fry sauce from the kit.
  5. Serve immediately.

    I’m the same as you. As much as I love making my food from scratch, sometimes you just need a shortcut. I haven’t heard of these stir fry meals, so I’ll put it on my list next time I’m at the store.
