September is jam packed when it comes to the month long food holiday celebrations, potato month, chicken month, breakfast month, organic harvest month and my person favorite bourbon month.   With all these holidays, you’d have no problem keeping yourself busy in the kitchen coming up with ideas to “celebrate”.   

However there is one celebration that’s left off the lists that I want to chat about today and not only is it for an amazing cause but it gives you the excuse to make some good cookies too. 

In 2008 two OXOnians (that’s what they call their employees, pretty fun right?) created Cookies for Kids Cancer after their 2 year old son was diagnosed with pediatric cancer.  As a child of OXO Liam was an important member of their family and his diagnosis really effected all their employees.   It’s a touching story and I just had the opportunity to hear it first hand by Liam’s Mom, Gretchen at the OXO HQ this past week.    

The beginning of September is when OXO officially kicks off their campaign and show of support and like last year has invited a number of bloggers to join in the cause.

As I mentioned I had the opportunity to stop by the OXO HQ this week for the official kick-off with the one and only and amazingly talented Dorie Greenspan.   Talk about a fun evening,  OXO cookie tools for us to play around with and Dorie giving us a demonstration of two of her cookie recipes.  I might be getting the moniker of “the cookie lady” from some of my friends but it’s always inspiring to learn tips from a pro like Dorie. 

Now while I took away cookie tips from Dorie that night, what really stuck with me was Liam’s story.  I had read it plenty of times but hearing it first hand makes a complete difference.  I’m not a mom but it was hard to keep the tears back when Gretchen spoke about him and his short life.  

So why cookies? Because cookies make people happy and do you need another reason besides that? 

 

How about we get on to the baking now?  For this year OXO gave us a choice of three cookie baking kits and I couldn’t say no to the Spritz Cookie Set.  The last time I attempted them (with my much cheaper cookie press) was a total failure, if I was going to get it to work then at the very least let me have the best tool out there. 

A couple of tips I took away after my first round of dough failed miserably -your dough needs to be very very soft.  If it’s crumbly it will not press, so this recipe needs to be followed to the T!  The first few press with it will be a little off but the rest will come out nice and pretty, that’s just a function of the gun.   Also make sure your cookies sheets are ungreased and clean.  Don’t worry, they will not stick to a naked pan and don’t be tempted to put parchment or a silpat down the cookies won’t press out.

Cinnamon Dulce de Leche Spritz Sandwich Cookies
Save Recipe

Ingredients

  • 2 cups unbleached all-purpose flour
  • 1 teaspoon cinnamon
  • 1/4 teaspoon salt
  • 1 cup (2 sticks) unsalted butter room temperature
  • 1/2 cup granulated white sugar
  • 2 large egg yolks, room temperature
  • 1 - 13.4oz can dulce de leche

Instructions

  1. Heat your oven to 375 and have 2-3 ungreased, cleaned cookie sheets ready.
  2. In a medium bowl mix the flour, cinnamon and salt.
  3. In the bowl of your stand mixer, fitted with the paddle attachment cream the butter and sugar for about 2 minutes. Scrape down the sides and add the eggs one at a time.
  4. Mix in the flour in two parts until the dough is nice and soft but do not overmix. If necessary use a spoon to mix in the bottom and sides of the dough.
  5. Put a small amount of the dough into a cookie press fitted with a disk of your choice and press onto the cookie sheets.
  6. Bake for 7-8 minutes or until lightly golden brown.
  7. Let cool completely.
  8. Stir the can of dulce de leche and spread a small amount on one of the cookies and top with another. Continue until all the cookies have been sandwiched together. Reserve any remaining dulce de leche for another use.
  9. Store cookies in an airtight container.

    Love that candid of Dorie. It’s like she has her hands over her heart to show how passionate she is. Funny how we both did sandwich cookies with our cookie presses! I had no problem using parchment paper with my mine though. Interesting thought. Either way, I love that you used dulce de leche for the filling. One of my favorite (and not used enough) ingredients!

    So jealous that you live near the OXO headquarters and got to attend this event! How fun! I’ve never tried a cookie press, but I just have a feeling I would burn these thin little cookies in a heartbeat. However, I would love to try them someday, even if I have to physically sit in front of the oven, peering through the splatter-stained window to ensure my cookies don’t burn 🙂

      I’m not going to lie, I absolutely over baked the first batch of these guys. There is so much butter in them they bake up quickly but once you get the hang of it, they are the easiest cookies!
