Do you remember when chicken caesar salad was on option on the menu at practically every restaurant you went to back in the day? Dry chicken, sad lettuce, too much cheese and dressing that was definitely not house made. This was considered the “diet” option and everyone went for it, including me but what were we thinking?
It’s a good thing that people more or less got over their love affair with the chicken caesar because I can tell you there are so many better options out there that deliver the same flavor except better and healthier.
Insert the glorious avocado! Did you know that this nutritious packed fruit makes an awesome replacement for eggs? It’s also full of the healthy fats, tons of vitamins and minerals, a good source of protein and it tastes good but I don’t really need to sell on avocados do I?
Yeah, I didn’t think I did but what I can do is sell you on taking a look at caesar salad again. You see this is the perfect meal to cook up on a busy weekday night. After a long day at work and then hitting the gym, you want to make those calories you burned off count but also a meal that tastes good and comes together quickly.
#WeekdaySupper is continuing our #ChooseDreams initiate with American Family Insurance and we have some great healthy recipes lined up for a fit lifestyle. There is no reason to give up taste for a healthful meal and this salad is chock full of good flavor.
Since I figured I was already going out of the caesar salad box anyway I couldn’t help but toss some perfectly ripe grape tomatoes into the mix. It is August and tomato season is here, I’ll find any excuse to eat them!
Ingredients
- 1 large ripe avocado
- juice from 1 lemon
- 2 garlic cloves
- 1 teaspoon worcestershire sauce
- 2 tablespoons parmesan cheese, grated
- 1 teaspoon dijon mustard
- 1/3 cup extra virgin olive oil
- 2 cups day-old sourdough bread, cut into 1 inch pieces
- 2 tablespoons olive oil, divided
- 1/2lb extra large shrimp, cleaned
- 1 small or half 1 large avocado, cubed
- 10 grape tomatoes, halved
- 1 small head romaine lettuce, cleaned, dried and outer leaves discarded
Instructions
- Place the avocado, lemon juice, garlic cloves, worcestershire, parmesan cheese and dijon mustard in a blender. Puree until smooth and drizzle the olive oil slowly from the top with the motor running until the dressing is emulsified. Transfer to a bowl or small jar.Heat your oven to 350 degrees and toss the sourdough with 1 tablespoon of olive oil. Bake until golden brown and toasted, about 10-15 minutes, turning halfway through.Drizzle the shrimp with the remaining olive oil and place on a baking sheet. Season with kosher salt. Bake in the 350 degree oven for 7-9 minutes or until no longer pink throughout.To prepare the salad: In a salad bowl, tear the romaine leaves and toss with 2-3 tablespoons of avocado caesar dressing.Divide between two plates and top with the shrimp, croutons, cubed avocado and grape tomatoes.

I love everything about this! I pre-make dressings all the time to assist with my weekly meal prep and then just grab and pour. I make a tasty avocado ranch from scratch but this Caesar combo sounds so yum. I can’t wait to try it!
Mhmm YES to your fun twists of adding avocado and shrimp. I love the creaminess avocado brings to dishes and shrimp is always a really nice change from chicken chicken chicken. Great recipe and photos!

I love avocado and shrimp together. I was going to make a similar dish tonight (and checking out your blog for ideas) but I was going to add sliced avocado. Putting them in the salad dressing is inspired so I’ll do that instead. Thanks for sharing your recipe! 🙂
