Given the opportunity I will eat ice cream all the time.   It’s no joke, when we go on vacation, I plan ahead of time which ice cream shops we must visit.

This might sound silly coming from the girl who’s about to open a cookie making business but yes ice cream just might be my favorite dessert.

Okay, scratch that ice cream with cookies are my favorite dessert.  For arguments sake though, it’s a lot easier to pick up a really good scoop of ice cream than it is to find the perfect chocolate chip cookie.

I mean how can you not love ice cream? It can be made in every flavor imaginable, it can contain cookies, nuts, candy, beer, bourbon, hot fudge, caramel, sprinkles, peanut butter, fruit – anything your heart desires. Anything including avocados and goat cheese.

Now I consider myself pretty well stocked in the ice cream making department, I have 3 freezer bowls for my ice cream maker and one is always ready to go in my freezer.  However there are a few areas that needed some improvement, lucky for me OXO came to the rescue and sent me some ice cream making tools that fixed all my problems.

For starters their angled measuring cup is perfect for measuring out milk and cream without having to bend down to look at the side of your cup to see if you’ve reached the right amount.  Just look down and your measurements are there!

I loved the mini chopper for finely chopping up the chocolate wafter cookies to top my ice cream with.  Also great if you plan on making any ice creams with nuts! No more mess of chopping nuts all over the counter.

Perhaps my favorite items though was the locktop container and solid stainless steel ice cream scoop.  The container is just the right size for my freezer and it fits the exact amount my ice cream maker makes!  As for the ice cream scoop, I’ve been through many and this is the first one that produced nice looking scoops without killing my wrist! I know you know what I’m talking about here!

Right, so back to our avocado ice cream. This is a don’t knock it until you try it type of flavor.  Let’s remember that avocados are a fruit and just as delicious savory as they are sweet.  Plus since avocados are full of healthy fats and are so creamy they make a great replacement for eggs in the ice cream.  Which means. . . . no eggs! That doesn’t mean this isn’t dairy free and  you absolutely could make it dairy free if you choose, I bet it would taste awesome (something to note goat cheese is lower in lactose than cows milk).

So we’ve got our creamy California Avocados, the tangy goat cheese swirled throughout but then I felt as if the ice cream needed just a little something to finish it off.  What could it be? I like crunch, a little texture with my ice cream.  The perfect answer was chocolate wafers!  What would you top your ice cream with?

Avocado Goat Cheese Ice Cream
Save Recipe

Ingredients

  • 3 ripe California Avocados
  • 3/4 cup granulated white sugar
  • pinch of kosher salt
  • juice from 1/2 lime
  • 1 1/4 cups whole milk
  • 1 1/2 cups heavy cream
  • 4 ounces goat cheese, room temperature
  • 2 tablespoons confectioners sugar
  • 1 tablespoon whole milk
  • chocolate wafers, crushed to top

Instructions

  1. Place the avocados, sugar, salt, lime juice and whole milk in your blender. Puree until smooth.
  2. Add to a bowl with the heavy cream and stir until combined.
  3. Put your ice cream base in your ice cream maker and churn for 25-30 minutes or according to the manufacturers directions.
  4. In a small bowl mix together the goat cheese, milk and confectioners sugar until smooth.
  5. Once the ice cream is done churning scoop a small amount into your container and swirl in some of the goat cheese. Continue to alternate layers of goat cheese and ice cream until the container is full.
  6. Freezer for 3-4 hours before serving.
  7. Scoop into bowls and serve with crushed chocolate wafers on top.

    Very cool! Sounds weird at first, but I recently had rosemary goat cheese ice cream and it was incredible. Plus, I NEEEEED all those OXO items! Especially that box…

      Have you signed up for the blogger outreach program that OXO does? If not you should, then you can get all the fun OXO tools too! Also sweetened goat cheese basically takes on the same taste as cream cheese but it’s better because it’s goat cheese! 🙂
