June is almost over and almost the myriad of foods that claim to be celebrated throughout the month (national Turkey month in June, really?), it’s National Ice Tea Month!
Have you been getting your daily dose? I’m sure my Southerners are nodding their heads yes as they sip on their sweet teas – I lived down there for 4 years, I know you love that stuff! As a yankee though, I prefer my tea unsweetened or even better spiked with a little extra something to enjoy at the end of the day.
Since I was recently asked to become a member of the Blogtender Nation by Blue Chair Bay Rum, we thought there is no better way to celebrate National Ice Tea Month than with a cool glass of ice tea and a little splash of rum.
Blue Chair Bay Rum is a new-ish premium rum created by Kenny Chesney – yes that Kenny Chesney of country, signer-songwriter fame. There are three flavors to choose from that will instantly send you to the beach once one of those bottles hits your table, White, Coconut and Coconut Spiced. The bottle is probably one of the prettiest I’ve seen, frosted glass that looks like the ocean. Any cocktail made with Blue Chair Bay can really take you away to a tropical place. Since ice tea always equals summer to me, I wanted to add a complimentary fruit to it that also relates to summer.
As peaches start to come into season, I start to remember the peach farm that was 15 minutes down the road from us growing up. We would buy bags of these juicy delicious peaches every summer. Biting into a perfectly ripe one would cause juice to drip down your chin, hands, neck and shirt. Can you get any more summery than that? I don’t think you can. Summer is cause to get dirty, eat with your hands and have a tall glass of ice tea to drink it all down.
Ingredients
- 3 cups boiling water
- 3 mint tea bags
- 1 very ripe peach, cut into 1/2 inch pieces
- 1 tablespoon agave nectar
- 2-3 sprigs fresh mint
- ice
- 6 ounces prepared peach mint ice tea
- 2 ounces white rum - such as Blue Chair Bay
- ice
- fresh mint for garnish
Instructions
- Let the mint tea bags steep in the boiling water for about 5-7 minutes. Remove and let cool for 10-15 minutes.
- Pour the mint tea into a pitcher and add the chopped peaches. Using a masher, mash some of the peaches, leaving some intact. Stir in the agave nectar.
- Fill the pitcher with ice and fresh mint.
- This can be made ahead of time, just leave the ice out until before serving.
- To make the cocktail: Fill a collins glass or mason jar with ice and pour in 6 ounces of peach ice tea plus 2 ounces of rum. Stir and serve.
- Makes enough for about 4 cocktails.

Gah, you guys are killing me today! I was just at Jennie’s blog and she posted a watermelon-mint cooler. Now I’m staring at these photos of your spiked peach mint iced tea and I’d do anything for a drink! Thank goodness it’s Friday. Also, you totally transported me with your story about eating fresh, ripe peaches in the summer. I could almost taste that peach and feel that juice running down my arms.

You already know, girl… I’m a summertime lush and I plan to eat A LOT with my hands. Mostly I’ll be a lush. The peach and mint complement this drink perfectly. Give me a hammock and I’m down!
