Avocado Lime Goat Cheese Dip

If there is one thing you don’t want to leave off your game day eats table this Sunday it’s a delicious dip.  Make up a big batch of Avocado Lime Goat Cheese Dip and serve it up with a variety of Kettle Chips

If there is one thing you can’t have too much of at a party it’s chips and dip.  It’s important to have variety, you never know who that salt & vinegar lover is, or the barbeque, not to mention the spicy chip fanatics or those who just like plain salty, crunchy chips.  

With game day right upon us I felt it was my duty to provide you with one more dip recipe.

For the last two months or so I’ve been a little obsessed with mashing avocado into some yogurt, citrus, adding a couple of herbs, garlic, salt, pepper, etc. .  and making a mess of a green goddess dip if you will.   It’s been my go to when I wanted something to dip vegetables or chips in and while tasty I felt like something more could be added to it, something to push it over the edge and perhaps make it the ultimate avocado dip (yes even better than guacamole).  Goat cheese was the answer.  Creamy and tangy, thick but not so much it would break your chip in half.

Is it me or is the first association with an avocado based dip tortilla chips? That was my next challenge, I wanted this dip to compliment some of the rich and spicy flavored potato chips that I love.  I might add, it didn’t hurt that my very favorite chip brand in the world Kettle asked if I’d like some samples to go along with a dip for game day.   For starters their Krinkle Cut Buffalo Bleu – I do not like bleu cheese, I love these chips. You hardly taste the bleu and it’s just the right amount of spice, not to mention the krinkle cut is sturdy enough to handle a dip of this magnitude.  Also on the Krinkle Cut line is their Salt & Pepper, another chip with a bit of a bite but is complimented by the coolness of the avocado and goat cheese.  Oh and for anyone watching their weight, I suggest the Bakes line, no other “baked chip” stands up to Kettle’s.  Seriously, it’s that good. 

What have we learned today? Make plenty of dip for your guests on Sunday and make sure you stockpile those chips with lots of flavor options!

Avocado Lime Goat Cheese Dip
Save Recipe

Ingredients

  • 2 large ripe avocados
  • 4oz goat cheese, room temperature
  • 1/2 cup low-fat Greek yogurt
  • 1/4 cup fresh lime juice
  • 1 garlic clove
  • 1/2 teaspoon kosher salt
  • 1/4 teaspoon black pepper
  • 1/4 teaspoon cumin powder
  • 1/8 teaspoon cayenne pepper

Instructions

  1. In the bowl of your food processor place the goat cheese and avocado. Pulse 6-8 times or until the avocado and goat cheese starts to mash up.
  2. Add the greek yogurt, lime juice, garlic, salt, black pepper, cumin and cayenne pepper.
  3. Process until the dip is completely smooth, stopping to scrape down the sides once to make sure everything is combined.
  4. Transfer to a serving bowl, taste and adjust salt and pepper as necessary.
  5. Serve immediately with a variety of Kettle Chips.
  6. If making ahead store in an airtight container in the refrigerator with a touch of extra lime juice over the top to prevent any browning.

    You’re a smart woman, Susan. Thank goodness you spread your wisdom through this blog so that I can learn your ways. Mashing avocado to make dips is absolutely brilliant. I can’t believe how creamy ‘n luscious this looks! And damn, I loooooove Kettle Chips. It’s only 10 am and I’m craving chips ‘n dip real bad!
