Can someone please tell me where the first week of December has gone? In this week alone, I’ve attended one holiday party, baked up a batch of cupcakes and over 300 hundred cookies (I’ll get to that tale later this month).  The holiday season is in full swing and if you aren’t prepared for it yet, you are in luck today!

One dish that spells holiday to me is herb crusted lamb.  A quick trip to your butcher (or in my case Trader Joe’s), you can pick up a frenched rack of lamb to be covered in a garlic, herb and breadcrumb crust and baked in the oven.  Let the lamb cool slightly to be slice into “lollipops” for your guests to enjoy throughout the evening.  It’s a great one handed appetizer to enjoy while balancing a glass of wine in your other hand.

A quick note on the cooking time of the lamb - as you can see from my pictures I like my lamb quite raw, in fact it might have been baaing at me. Please adjust the cooking time up for your preferred internal temperature, I do recommend checking with a meat thermometer prior to cutting the lamb into lollipops.

Ingredients

  • 1 - 1 1/4 to 1 1/2 pound frenched rack of lamb
  • kosher salt and pepper
  • 2 tablespoons dijon mustard
  • 1 tablespoon Gourmet Garden Basil
  • 1 tablespoon Gourmet Garden Oregano
  • 1 tablespoon Gourmet Garden Parsley
  • 1 tablespoon Gourmet Garden Garlic
  • 1 teaspoon Gourmet Garden Chili Pepper
  • 1/4 cup dry breadcrumbs
  • 1 tablespoon olive oil
  • For the herbed yogurt dipping sauce:
  • 1 cup low-fat Greek Yogurt
  • 1 tablespoon lemon zest
  • juice from 1 lemon
  • 1 teaspoon Gourmet Garden Basil
  • 1 teaspoon Gourmet Garden Oregano
  • 1 teaspoon Gourmet Garden Garlic
  • 1 teaspoon kosher salt

Instructions

  1. Heat your oven to 400 degrees F.
  2. Pat the lamb dry with paper towels and season both sides with salt and pepper.
  3. In a cast iron skillet over medium heat with 2 tablespoons of olive oil sear the lamb on all sides until brown (about 3-4 minutes per side).
  4. Remove from the heat and brush with dijon mustard.
  5. In a small bowl, mix together the herbs, garlic, breadcrumbs and olive oil to form a crust.
  6. Press the garlic and herb crust on the meaty side of the lamb, pressing down hard so it stays on the lamb.
  7. Place back on the cast iron skillet, crust side up and transfer to the heated oven to roast for 15-20 minutes (check the internal temperature after 15 minutes 145 degree for rare, 160 for medium). Cook until the temperature meets your desired preference.
  8. While the lamb is cooking, in a small bowl, mix together the yogurt,lemon zest, juice, basil, oregano, garlic and salt.
  9. Remove and let sit for 5 minutes before slicing between each rib bone with a sharp knife to create the lollipop.
  10. Serve immediately with the yogurt dipping sauce.

      Yes! I was surprised to find them at Trader Joe’s too, my guess is that the frenched rack of lambs are hanging around for the holidays (and they are really affordable). Stock up!

      I honestly can’t remember what they cost. I see them in the store all the time but never paid attention to the price. I have noticed them on sale and if you go to their website they are offering a coupon, so it’ll be a good chance to give them a try!

      Lamb is just like cooking steak and as long as you have your meat thermometer nearby you are good to go. Then there is no chance of over cooking it!
