I’m going to tell you a little something that may not be much of a shock. I really like poutine. Scratch that, I really LOVE poutine. Poutine Hash, plain old poutine, and a loaded version, I will take it every which way. So with a kitchen full of homemade tater tots, it was only natural that I’d turn it into tater tot poutine.
This poutine recipe, also happens to coincide with a fun little club that Christine from Cook the Story started called Make it Mine. The premise of the club is that every few weeks a new topic is picked and we do a fun twist on it. Make it your own, make it healthier, make it according to your dietary guidelines, or make it bad for you. Have you figured out the topic yet? Yes, POUTINE!
As you can see from my photos, besides switching out the traditional french fries for tater tots, I topped mine with some crispy roasted duck. Go ahead and top yours with anything you’d like or just leave it as is. This dish is decadent enough. I made one small change to my regular gravy recipe this time, hoping for one that was a little bit thicker. I changed out the roux for a cornstarch slurry.
It’s a fun project to make your own tater tots and finish up with the poutine, but I won’t fault you if you cheat and buy the frozen ones. 🙂
Ingredients
- Homemade Tater Tots or 1 bag frozen Tater Tots
- 2 cups veal or beef stock
- 2 tablespoons cornstarch
- 1 tablespoon water
- 1 teaspoon freshly ground black pepper
- 1 cup cheese curds
- optional: roast duck, smoked meat or bacon
Instructions
- Prepare your tater tots accordingly.
- Pour the veal stock in a small saucepan over medium-high heat. Bring to a boil.
- In a small bowl, whisk together the cornstarch and the water to create a slurry. Whisk the slurry into the stock and bring back to a boil. Reduce the gravy by half and season with the pepper.
- Place the tater tots in a bowl, top with cheese curds and finish the the poutine gravy.
- Serve immediately.
Drool!!! Oh my, I love tater tots. I don’t care how old I get, I will always lover tots.

So you live in NYC and you love poutine? Awesome! I grew up in Canada and didn’t realize it was a “Canadian” thing until I moved away. Now I miss it so much!! I will try your recipe, see if it brings back memories!

OMG. My eyes are leaping out of my head right now in amazement over this kick ass version of poutine. First, I love that you made your own tater tots (I haven’t visited that post yet – I’ll read it right after this) and of course you had to kick it up a notch by making poutine. Then you go and add even more amazingness with the crispy duck. I am picking up what you’re putting down, lady!

I was actually a block away from Union Market this past weekend, but wasn’t able to get my arse over there! I really need to get my hands on CHEESE CURDS!
I know you love your poutine but I have never tried it. I guess one of these days I’ll have to break down and see what all the fuss is about. 🙂
