Meyer Lemon Pistachio Loaf #SundaySupper

If you asked me to choose something citrus vs. chocolate I’d have to sit long and hard about it first.  Many factors might come into place, have I had too much chocolate in the recent past (pfft like that’ll ever happen), are we talking breakfast sweet vs. dessert sweet and finally the type of citrus.  In the end I’d probably get the chocolate option BUT like I did a few weeks ago when out to dinner, I went citrus. 

What I love about the citrus family is the great versatility of the fruit, you can go sweet or savory and every single meal I can think of can be enhance by it.  The tart acidity can break up a fatty dish; vegetables almost always benefit from a spray of lemon juice after cooking; avocados would go brown without lime juice and where would we be without the combination of lemons and blueberries?

I’m somewhat embarrased by the amount I go through at home, right now sitting my fridge I have a box of clementines, two types of lemons and limes.  Did I mention it makes me really sad to have to wait most of the year to get oranges?  Sure they aren’t local to my climate, but I’ll still only eat them when they are in season to their region. 

So the point to my citrus ramblings here?  If you haven’t figured it out #SundaySupper is going citrus crazy this week! I’m in love with so many of the recipes listed and we prove my points above that citrus works in every type of dish!

Meyer Lemon Pistachio Loaf #SundaySupper

I had it in my mind for awhile to do a meyer lemon quick bread with nuts – pistachios are one of those that I tend to grind up in things or snack on but never focus on.   Since pistachios don’t have too much of an overwhelming flavor I thought it’s be a great combination!

Ingredients

  • 2 cups all-purpose flour
  • 1 teaspoon baking powder
  • 1/2 teaspoon baking soda
  • 1/2 teaspoon salt
  • 1/2 cup (1 stick) unsalted butter, room temperature
  • 1/2 cup granulated white sugar
  • 2 large eggs, room temperature
  • zest from 1 meyer lemon
  • juice from 2 meyer lemons
  • 3/4 cup shelled unsalted pistachio nuts, toasted

Instructions

  1. Pre-heat your oven to 350 degrees F. and grease a 9 inch loaf pan.
  2. In a small bowl, whisk together the flour, baking powder, baking soda and salt. Set aside.
  3. Using your stand mixer or hand mixer, beat together the butter and sugar until light and airy about 3-4 minutes. Beat in the eggs one at a time and then add the meyer lemon zest and juice. Mix until just combined.
  4. In two portions, add the flour mixture, scraping down the sides in between each addition.
  5. Finally, stir in the pistachios.
  6. Pour the batter into the prepared loaf pan and baking for 40-50 minutes or until a toothpick inserted comes out clean.
  7. Let cool completely on a cooling rack before removing.

    Quick breads are so wonderful. You can whip up one in no time. My husband would really like this one because pistachios are his favorite nut. I don’t get them for him often and I think it’s about time for me to get some for him again. I might as well make this lovely bread too.

    I haven’t ever made anything with pisatchios before but I’ve been tossing the idea around in my head for a while. I love the nuts by themselves, yummy and roasted (and salted, yum) but I’ve never actually baked with them. So this recipe is very intriguing to me! Bookmarked.

    I am the same way. As much as I love clementines and other types of oranges I wait until they are in season as well, I do the same thing with berries. They just aren’t the same other times of the year. But that does mean I go a bit crazy with them during the times of the year they are in season. You combined some of my favourite flavours with this bread, I can’t wait to give it a try

    Lemon and pistachio are a fantastic combination – this looks divine! I love citrus too but living in the Midwest it’s all coming from somewhere else. We are moving to a more Mediterranean climate next year and I can’t wait!

    What a beautiful loaf! I love that you combined pistachios with the Meyer lemons in a quick bread. I am mentally toasting a slice and slathering it with butter. Maybe even lemon butter. So delicious!

    Lol, Susan, I love your thought process on whether to choose chocolate or lemon (funny enough, I go through the same thing…although 9 times out of 10, chocolate wins out). This loaf looks amazing! I really need to get my hands on some meyer lemons – can you believe I’ve never tried them before? The pistachio must add such an amazing boost of flavour and texture.

    I know you live in NYC too. I can find almost any ingredient, but I’ve yet to see a Meyer lemon. Any advice?

      I’ve found them at my local grocery co-op and also ordered from Fresh Direct. Have you tried Whole Foods or Trader Joe’s? The season is short though for Meyer Lemons. Not sure how much longer they will be out. You could substitute a little orange juice or mandarin juice in with lemon juice and that’ll work, since it’s a hybrid of the two.
