“I make vegetables look good” – That is what I said to my husband after I took this photo, as he sat not so patiently for me to stop taking pictures in the kitchen and to serve dinner.
You want an easy, delicious, no fuss vegetable side, I have it right here for you.
I didn’t even do any prep work for this one, it came already chopped up for me. Freshdirect, my grocery of choice, had this beautiful cauliflower mix on sale from Satur Farms last week and I ordered it right away. We are really only getting root vegetables, carrots, celery and squash from our CSA right now and I was craving something different with dinner.
Recipe:
Assorted cauliflower florets (about a pound), or 1 head of cauliflower trimmed into florets
2 talbespoons olive oil
salt and pepper to taste
Preheat your oven to 425 degrees F. Drizzle with olive oil and sprinkle with salt and pepper. Roast for 20-25, turning about halfway through, until brown and caramelized. Remove from oven and season with additional salt if necessary.
Have never seen cauliflower in so many colours. This is awesome! I love this veggie and can have it baked, puréed, roasted, pickled.
