Who’s getting excited for Fall? Hard to believe it but August is almost over and the unofficial start to fall is upon us and yes I do say unofficial start because Fall doesn’t really begin until September 22nd.
I think many of us forget that summer technically continues on through most of September. Can you believe I’ve already spotted a number of pumpkin recipes? I’m not ready for that, I’m still eating all the peaches, tomatoes and corn I can get my hands on. In this house, pumpkin and winter squashes don’t go into rotation until October! So for everyone that’s just like me and is holding until their summer produce for as long as they possibly can, this weeks menu is for you! We’ve plenty of tomatoes and stone fruits, plus some comfort food for good measure!
