Prosciutto Pear Pomegranate and Cheese Crostini

If I had to choose between all the snacks to eat for the rest of my life I would have to pick cheese and crackers or cheese on bread.  It’s a pretty easy choice if you ask me – creamy cheese and crusty bread are the perfect play in textures.  However you have to admit even with your favorite snack, sometimes you need to reinvent it just a bit to keep things exciting.  This is why I was very happy to partner with The Laughing Cow® today to reinvent snacking.

The Laughing Cow is pretty much my go-to cheese when it comes to my mid-afternoon snack.  They are the perfect portion to grab, sit and savor for a few minutes while I break free of the confines of my desk.  My fridge is stocked with pretty much every flavor they make and so I like to do a little roulette with the wheels and figure out what flavor party I’m going to have that day.

Normally I land on Creamy Queso Fresco Chipotle because I just love the balance of creamy cheese and bits of spicy heat from the chipotle peppers.  My mind started to drift though, how can I make a snack that’s pretty much perfect just a little bit better?

My eyes drifted over to my fruit bowl to some pretty pears begging to be eaten and viola the idea sparked into my head!

Fruit, cheese and bread! Brilliant, I said to myself they get put together on a cheese board, so why not take one step out and just pile it all together on a crostini?  I couldn’t stop right there and I rummaged through my fridge to find some prosciutto for a little extra touch.

This snack is  so easy to put together, anyone can do it.  Crusty bread, creamy creamy, salty prosciutto and sweet pears to be finished off with jewel toned pomegranates.  Seems a little fancy for an afternoon snack huh?  Well, why can you treat yourself once in awhile right? Plus if you’re like me and always have these ingredients on hand, they are perfect when you have an unexpected guest or need to put an appetizer together quickly for a last minute holiday party invite.  In fact, I think these might even make an appearance at our Thanksgiving pre-nosh table this year.

Prosciutto Pear Pomegranate and Cheese Crostini
Save Recipe

Ingredients

  • 2 wedges The Laughing Cow, Creamy Queso Fresco Chipotle cheese
  • 2 ounces Prosciutto di Parma, torn into small pieces
  • 1 ripe pear, sliced into half moons
  • 1 tablespoon pomegranate arils
  • 1/2 loaf baguette sliced into 1/2 inch rounds, lightly toasted

Instructions

  1. Place the lightly toasted baguette round on a platter and spread about 1/4 of a wedge of The Laughing Cow cheese on each round.
  2. Top with a slice of pear, a small piece of prosciutto and 2 or 3 pomegranate arils.
  3. Enjoy!
  4. Serves about 2-3 people
