Do you remember your neighborhood ice cream truck?  Ours would start some time after Memorial Day and circle round the neighborhood until October or so.  You could hear the music blasting a few blocks away and the excitement would build.  The ice cream man is coming!  All the kids that were planning outside would suddenly scramble indoors begging for money or searching the couch cushions for loose change.

My mom swears, I would run to the curb with my hand outstretched wide and yell STOOOOOPPPP!!  Clearly, I really wanted to get his attention but I think the gaggle of kids who lived on our block was sign enough he had business to attend to.  Our ice cream man was awesome, not only did he have the usual fair of ice cream bars and popsicles but he had candy.  Candy you guys, which meant not having to leave home to get your summer sugar high.

You’d think the ice cream loving child that I was would always leave his truck with something dripping with chocolate or nuts or both but nope for some reason I always went for the snocone. Looking back, that was a stupid mistake.  It’s sugared ice water but back then I was all about that rock hard frozen treat.

I like to think that part of me was just holding out hope that my dad would suggest ice cream after dinner and we’d drive on over to our favorite soft serve spot.  I wouldn’t want to get called out for having ice cream twice in one day after all.  My guess is that I really just liked sugary treats.

Back to that soft serve joint, J&A’s ice cream.  I loved it and looked forward to them opening up every summer.  They would only stay open for about 3 months out of the year but to this day it’s still some of the best soft serve I’ve had.  My order was always the same, a vanilla cone with chocolate dip and rainbow sprinkles.  You have to have the sprinkles.  It was always a sad day when they closed up for the season, it meant summer was finally over for good.

Part of me likes to think of these ice cream pops as an ode to my favorite ice cream truck and that soft serve joint growing up.  While J&A’s didn’t serve any fancy flavors, their chocolate dip was on point. Plus the ice cream dribble down your chin and arms you experience with these pops brings you back to when you were a kid again.

This is also the first time I’m trying my hand at no-churn ice cream and I totally get it.  The ice cream is creamy and light and extremely easy to make.  The recipe turns out a ton of pops, so it’s perfect for a party! Unless you live in our house where they barely survived a few days, Braden described it as chocolate covered yummies.

Did I mention double the chocolate? Besides the chocolate on the outside, you have the mint fudge ripple surprise on the inside.  It’s a chocolate lovers dream.

Ingredients

    For the fudge sauce:
  • 3 ounces semi-sweet chocolate
  • 2 tablespoons cocoa powder
  • 1 1/2 tablespoons unsalted butter
  • 1/3 cup heavy cream
  • 4 tablespoon brown sugar
  • 1 teaspoon mint extract
  • 1/8 teaspoon salt
  • For the no-churn ice cream:
  • 2 cups heavy cream
  • 1 teaspoon mint extract
  • 1 - 14 ounce can sweetened condensed milk
  • For the chocolate dip:
  • 2 cups dark or semi-sweet chocolate
  • 1/4 cup vegetable oil
  • chopped pistachios or rainbow sprinkles (optional)

Instructions

  1. In a small saucepan over medium heat combine the chocolate, cocoa powder, butter, heavy cream, brown sugar, mint extract and salt. Stir until it's completely melted and glossy. Set aside to cool to room temperature.
  2. In the bowl of your stand mixer fitted with the whisk attachment pour in the heavy cream and beat on medium-high until stiff peaks form.
  3. In a large bowl add the can of sweetened condensed milk and mint extract and a scoop of whipped cream. Stir to loosen up the condensed milk and then fold in the rest of the whip cream, careful not to deflate it too much.
  4. On a rimmed tray lay out 3-ounce paper dixie cups and spoon in 1/3 of the way with the ice cream base. Drizzle in some of the cooled fudge sauce and then top with more of the ice cream base. You should make around 20 or so popsicles.
  5. Place in the freezer for about 1 hour and then insert the popsicle sticks in the center of each cup. Continue to freeze until sold for another 5 hours or overnight.
  6. Use scissors to carefully remove the paper from the frozen pops (I suggest leaving the ones you aren't working with in the freezer) and place back in the freezer to set up for 30 minutes.
  7. Place the chocolate for the chocolate dip in the microwave to melt, in 10 second increments and then stir in the vegetable oil.
  8. Dip each pop in the chocolate and then in chopped pistachios or sprinkles. The chocolate will firm up quickly and place back in the freezer to store before serving.

    I always went for the snow cone too! I don’t know why because it was totally not that great. I also went for that weird ice cream that had the frozen gum balls….sigh. Of course as an adult I would take your delicious ice cream pops over anything that came out of that truck…haha.

    I was gonna say, I don’t think these would make it much longer than a summer’s day in my house – yum! Our ice cream man is nuts…he only seems to come by after the kids are all in bed…and he zooms down the street with no chance to catch him if you’re digging for change. ha!

    BA ha ha! I love your little kid reasoning that if you had a sno cone, you could also have ice cream later in the evening. Sounds perfectly reasonable to me, actually 🙂 I just walked across town to get a chocolate-dipped cone tonight, and it was so freaking hot that the chocolate shell started sliding off immediately and got all over me, including down my shirt (so embarrassing). I feel like I need to just stay in the AC and make my own chocolate-dipped treats, like this!

      I mean frozen ice water is not the same as ice cream. It makes complete sense that you could have both in the same day. 🙂

    Ugh. Ice cream trucks. I grew up across the street a park, so my childhood memories involve the dang truck hanging out beside my house and playing a tinny out-of-tune song that vaguely sounded like Pop Goes the Effing Weasel for HOURS. My left eyelid still twitches uncontrollably when I hear that song, all those years later. 😛
    Those ice cream pops, on the other hand? I’d put up with Pop Goes the Weasel for a few hours to get my hands on one of those. 🙂

    I grew up in a tiny little town that didn’t have an ice cream truck, but I’ve enjoyed the one that now travels through our subdivision. A couple of times each summer our home owners’ association picks up the tab for everybody to visit the ice cream truck – a really fun treat! I’d love for our truck to have these delicious pops! Yum!!
