Mediterranean Brie Burger with Olive Fig Relish

Your typical cheeseburger gets a Mediterranean twist with thick slices of brie and a colorful relish of grilled peppers, sweet figs and California Ripe Olives.  Grill a Mediterranean Brie Burger with Olive Fig Relish up for dinner tonight!

Summer produce is hitting it’s stride right now and I couldn’t be more in love.  Strolling through the farmer’s market and practically every color of the rainbow is presented right now.  Red tomatoes, orange bell peppers, purple figs, yellow corn, blue potatoes.

You get my point here.  All this fresh in season produce makes keeping up with a Mediterranean style diet a breeze.  Not familiar with it? The Mediterranean diet emphasizes eating mostly plant based foods, whole grains, legumes, nuts and healthy fats like olives and olive oils.  For the most part we practice that diet.  I live and breathe by seasonal produce and ever since I was a kid olives were one of my favorite foods.

Of course the olive love started with California Ripe Olives, you know the ones I’m talking about, the big pitted black ones that are meaty and mild tasting.  I’m going to take a wild guess here but you probably played with these olives on your fingers, before plopping each and every one of them into your mouth.  I mean, I did as they were such a fun food to eat.  I’m still in love with California Ripe Olives now as much as I was as a kid. I look for any reason to add them to my meal – albeit a little bit more of a mature way than I when I was little.

While they make the perfect toss in for salads, pizza toppings or garnish; where they really shine through is in a flavorful sweet and savory relish for burger toppings or as a dip.

Since it’s burger season – yes, I think the summer qualifies as the official season for hamburgers! I thought it was a great excuse to mix up a vegetable and olive relish to top some perfectly grilled hamburgers.  I mixed in some fresh figs that were calling my name at the market to add just a tiny touch of sweetness to compliment the briny olives, grilled bell peppers and bite of red onion.  Top those burgers with creamy brie and you are set for a flavor packed dinner.

Mediterranean Brie Burger with Olive Fig Relish

Ingredients

    For the relish:
  • 1 red bell pepper
  • 1 yellow bell pepper
  • 1 small red onion, finely diced
  • 1 heaping cup California Ripe Olives, chopped
  • 4 fresh figs, diced
  • 1/2 lemon, juiced
  • 1 tablespoon extra virgin olive oil
  • kosher salt and black pepper
  • 1 1/2 pounds ground beef (grass fed recommended)
  • 8 ounces brie cheese
  • 4 hamburger buns

Instructions

  1. Remove the stem and seeds from the bell peppers and slice them in half. Place on your grill or grill pan for 2-3 minutes or until the skin starts to char but not soften too much. You want the peppers to retain some crunch. Remove and let cool slightly before cutting into a 1/4 inch dice. Transfer to a medium mixing bowl.
  2. In the bowl with the peppers add the diced red onion, chopped olives, figs, lemon juice and extra virgin olive oil. Season with salt and pepper to taste and set aside.
  3. Form the beef into 4 - 6 ounce hamburgers and liberally season with salt and pepper. Let sit at room temperature for 15 minutes before grilling or cooking on your stovetop in a cast iron skillet. For medium rare, you'll want to cook the burgers about 5-6 minutes per side at medium heat. When you flip the burgers, top with 2 ounces of brie on each burger.
  4. Remove from heat when the burgers are finished cooking and tent with foil to rest for 5 minutes.
  5. Place on toasted hamburger buns and top with a heaping spoonful of relish. Serve any additional relish on the side.

Notes

Note: If fresh figs arenโ€™t available near you, you can substitute for dried figs.

    What a fantastic relish. It would be great on crostini toasts too! Yep! We have passed along the olives on the fingers fun. Everyone in our family, through four generations, have to have big California black olives and there is always a dish full at our get-togethers.

    Thanks for bringing back the old memory of putting those black olives on my fingers, then reading them off!! Haha. I was such a picky eater but have always loved olives ๐Ÿ™‚ also, the Mediterranean diet sounds right up my alley, love all those flavors!
