Mango Mojito

So who’s hitting the fast forward button on summer? For the first time in years I’m actually doing summer things.  Going to the beach, enjoying barbecues, picnics in the park, nightly walks, summer blockbuster movies, dining al fresco. . . you name it, I’m getting to it at some point this summer.

After two years of working round the clock I sort of felt like it’s my due to get just a little time off, plus I like that I can do half these things during the week when everyone else is at work.  There is nothing like strolling up to the beach on a Thursday morning and having a difficult decision of which empty spot to lay your blanket on.   I mean, I have a tan! An actual tan! I am a person who doesn’t tan because I generally spend one or two long days of the summer outside and then I burn but this summer has been different.  It’s been a little bit here or there (with a lot of sunblock mind you) and now my ghostly skin is tan*.

*tan is a relative term, I’m probably still pretty white compared to anyone else. Ha!

The only thing missing from this summer fun time is relaxing poolside with a mojito in hand.  Granted I need access to a pool to actually do that but perhaps you can do it for me?

I call this mango mojito recipe, lazy girl mojitos because there’s no blender necessary to shake them up.  During happy hour with friends or after work you should be able to mix up that drink in no time flat without having to take out an appliance.  Just grab your cocktail shaker and a muddler and a little elbow grease to do all the work.

The mojitos are a bit pulpier than a blended one, but it still has all that sweet mango flavor mixed in with the mint and rum.

    I’ve been on a bit of a mojito kick lately, mostly because it’s a handy way of keeping the giant mint patch in our backyard under control. (And… well… booze.)
    Loving this mango variation you’ve concocted here. Now I just need to get my hands on a ripe mango! 🙂
