Now that we’ve entered the “summer” season, I’ve suddenly had a desire to entertain.

I don’t know why, I don’t have people over at my apartment.  Ever.

I know it sounds strange, coming from someone who cooks for a living but hear me out.  You see, when you put a musician and food blogger in a 1 bedroom apartment things start to get cramped.   We have stuff everywhere.  From his guitars, to my props, cookware and boxes.  Oh the boxes for shipping out cookies. . . It’s neat(ish) and organized but it doesn’t leave much room for living or entertaining, beyond the occasional friend or two for dinner.

Still the desire is there.  Is it the nice weather? Is the season? Who knows?

Which brings us to this Lemon Drop Meringue Cheesecake.   It may not seem like the perfect summer dessert but it is and it’s worth turning on the oven for, I promise.

See, summer also equals the season of pies but as I mentioned in the past pie and I don’t get along.  It was quite evident when I tried out the first version of the recipe.  It was supposed to be a boozy lemon meringue pie.  Except it didn’t want to set – at all.  Perhaps there was too much vodka, perhaps my measurements were off.  Who knows but cutting into that wet mess was not a fun experience, especially the clean up.

Goodbye pie, hello cheesecake.  A dessert that has never failed me.  A bold statement, I know but I learned from the best cheesecake maker – aka my mother.  She didn’t make them often but when did they always turned out fantastic.  Cheesecake baking is in my genes or maybe it’s because I’m a New Yorker.

Even so, the recipe for this Lemon Drop Merignue Cheesecake is not one to frighten you away.  Baking cheesecake is not as hard as it seems and even if it does crack in the center you have that beautiful meringue to place on top.

    In the Meringue ingredients list, 1/4 cup vodka is listed. The instructions for making the meringue do not include the addition of the vodka. When is the vodka added?

      Thanks for catching that Pat. You would add the vodka in with the egg whites and sugar over the double boiler.

      You can always leave the vodka out or try a blanco tequila as it should play nicely with the citrus notes.
