Next time someone says to you blondies are boring, change their minds by presenting a plate of crispy, chewy and gooey Potato Chip Dulce de Leche Blondies in front of them!

 Can I take a second and talk about what a huge dork I sometimes am? Not in the I like to watch sci-fi and read fantasy books type dork (although I think that puts me into geekdom?) but the fact that sometimes I zone out.

This time by zoning out I’m talking about the fact that I made these awesomely delicious blondies not just for you to enjoy but for a special blog friend, Stephie from Stephie Cooks who is about to run off and join the married lady club next week.  It was supposed to be for her virtual shower but stuff – life really got in the way.

Typical excuse, yes? But.  . . but I have a really good reason, which sort of leads up to my news (sorry Stephie, next week can be about you, m’kay?) 🙂

In all seriousness my dorkiness and forgetful nature last week was just a buildup of 4 very exhausting weeks for me.  If you’ve been reading for awhile, I’ve chatted about how life has been busy and not really getting out to do as much as I used to do.  There hasn’t been much life stuff to write about because I haven’t had much of a life.  Day to day activities were get up, walk the dog, work at home for an hour, go to the day job, come home, eat, spend a little time with the husband and if I had any mental capacity left do more work at home. Weekends were strictly relegated to blog and bakery work.

Where does that leave time to do fun things? Who wants to hear about that?

It was an exhausting schedule for the last 6 months and one I could barely keep up with, so I made the big change and left the day job.  A giant leap for sure but one I’m so excited about, I can dedicate more time to me, to this blog, to the Bake Shop (p.s. how about some cookies? I hear that cookie of the month club is pretty sweet).  In all seriousness, I felt the stress melt away that first Monday I didn’t have to wake up, take my hour long commute into Times Square and spend 4 hours working on excel reports.

Plus the pug is happier than ever to have me at home.  My biggest stressor is figuring out how to teach him sitting on my lap is not allowed during work hours (it’s not working thus far).

Let’s get back to the blondies okay? This is how we really want to start the weekend, isn’t it?

Normally  I have a need for chocolate in everything but like I said, these were made with Stephie in mind and (gasp) she doesn’t like chocolate.  I can get behind it, it’s not everyone’s thing.  So out with the chocolate, in with the dulce de leche and crunchy potato chips.  The perfect marriage of sweet, gooey, salty and crunchy.

Ingredients

  • 3/4 cup unsalted butter, melted and cooled
  • 1 3/4 cup packed light brown sugar
  • 2 large eggs, room temperature
  • 2 teaspoons pure vanilla extract
  • 1 1/2 cups unbleached all purpose flour
  • 1/2 teaspoon salt
  • 2-3 cups kettle cooked potato chips, lightly crushed
  • 1 - 13.4oz can dulce de leche

Instructions

  1. Heat your oven to 350 degrees and grease a 9X9 square pan then line with parchment paper.
  2. In a medium bowl mix together the melted butter, brown sugar, eggs and vanilla extract.
  3. In a small bowl combine the flour and salt and add it to the wet ingredients in 2 parts, careful not to over mix the batter. Mix in 1 cup crushed potato chips.
  4. In the bottom of your pan, line it with about a cup of potato chips and carefully pour over half the batter.
  5. Add in the dulce de leche in spoonfuls on top and then smooth it over in an even layer with a small offset spatula.
  6. Add in the remaining batter and top with the remaining potato chips.
  7. Bake for 45-50 minutes or until a toothpick inserted in the center comes out clean (note this will be a little hard to tell with the dulce de leche in the center and the middle piece might end up a bit under baked).
  8. Let cool completely in the pan before removing to cut into squares.
  9. Store in an airtight container for 3-4 days.

    Good for you! I recently changed jobs and now work from home. Steinbeck (the boy beagle) allows me to work quietly for about 4 hours, and then he tries his hardest to sit in my lap to help. Yeah. Doesn’t work quite as well as he thinks it should. Hope it all works out well for you! These look so good. We’ll take a bit plate of them for next week, ok? 9:00 on Saturday at the hair salon will be a great place to drop them off. You might even be able to talk our hair therapist into a haircut. She a curly hair genius. 😉

    I was VERY curious about this recipe because of the title. I love potato chips. The texture has to be super fun. It’s obvious from the photo and the ingredients that it tastes GOOD.
