White Chocolate Cranberry Macadamia Nut Cookies

For the first day of cookie week I was all about evoking the taste of Thanksgiving in a little cookie bite.  I like to think I was pretty successful in that endeavor – especially because my co-worker taste testers are still talking about that cookie a week after they quickly disappeared off my desk.

Today’s cookie though is all about taking the spirit of December and putting it in cookie form.

Yes I know most people associate cranberries with Thanksgiving but for me it screams more December and Christmastime.  I don’t know why, maybe because of the festive red color.  Either way between a pop of red and white chocolate mimicking snow how does this cookie not scream Christmas?

Plus isn’t this the time of year to break out the fancy nuts?

Oh you totally know what I’m talking about – don’t look at me like I’m crazy.  How many homes do you walk into during the month of December and see a bowl full of shelled walnuts out or the splurge on giant cashews or even better yet macadamia nuts.

Can we talk about these guys for a second?

Cashews will pretty much always be my go to nut but during the Whole30 time we were hitting the nuts for snacks to keep us going on a regular basis.  While most of what I was picking up were raw nuts to be toasted and seasoned at home, I happened to luck out one day at Costco when the macadamia nuts were back in stock.

You guys. Can we just say addiction? One bite and I was like this is popcorn in nut form.

It’s not like I haven’t had macadamia before.  Of course I had but there was something about the giant, salty costco nuts – macadamia nuts that is.  Stop right there with your dirty minds.

I kept referring to them as popcorn nuts.  Braden insisted on them being oh soo buttery and too rich (yet he was absolutely guilty of going after them) and coined the term butternuts.

I can’t believe I just shared this.

So yeah, a cookie with the spirit of December had to be made with butternuts.  Can you blame me?

White Chocolate Cranberry Macadamia Nut Cookies

Ingredients

  • 2 1/2 cups unbleached all-purpose flour
  • 1 teaspoon baking soda
  • 1/2 teaspoon salt
  • 3/4 cups unsalted butter, room temperature
  • 1 cup dark brown sugar, packed
  • 3/4 cup granulated white sugar
  • 2 large eggs, room temperature
  • 1 teaspoon pure vanilla extract
  • 1 cup macadamia nuts
  • 1 cup chopped white chocolate or white chocolate chips
  • 3/4 cup dried cranberries

Instructions

  1. Heat your oven to 350 degrees and prepare 2 baking sheets with parchment paper or a silpat.
  2. In a medium bowl combine the flour, baking soda and salt.
  3. In the bowl of your stand mixer fitted with the paddle attachment cream the butter and sugars until light and creamy about 1-2 minutes.
  4. Beat in the eggs on medium, one at a time until combined and add the vanilla extract.
  5. Mix in the flour in two parts on medium low speed, careful not to over mix the dough.
  6. Add the macadamia nuts, white chocolate and dried cranberries and mix for about 30 seconds.
  7. Scrape down the sides and bottom of the mixing bowl with a silicone spatula and make sure the add ins are evenly distributed throughout the dough.
  8. Using a cookie scoop, scoop the dough onto the prepared baking sheet with about 1 1/2 inches in between each cookie and bake for 9 minutes.
  9. Let cool for about 1-2 minutes on the baking sheet before transferring to a cooling rack to finishing cooling.
  10. Store in an airtight container for about 1 week.

    I became seriously addicted to macadamia nuts when we went to Hawaii. I could not stop eating them. They are so good. As are these cookies. I want to make a batch immediately. Then eat them all before anyone wakes up.

    I just wanted to double check that you mix the white chocolate macadamia cranberry dough for 30 mins before baking?
