Juicy Spiced Pork Chops topped with a colorful relish of Avocado, Mango and Tomato makes a quick and easy dinner that gets on your table in 30 minutes and is full of flavor!
Pssst. . . come here. . . want to know a secret? Do you? Lean in a little closer while I whisper it to you, I don’t want to scream this one out too loudly.
Since the beginning of September I haven’t had a lick of. . .
sugar.
grain.
dairy.
alcohol.
Wait what? Yeah, you heard me correctly. Am I torturing myself? No, I most certainly am not and I’m not on some weird juice cleanse nor am I drinking lemonade spiked with cayenne pepper either.
Yours truly decided to give Whole30 a go.
Why? Well a couple of reasons. The big one, as much fun as food blogging is, there is a downside and that downside is weight gain and letting your eating habits get out of control. Also, I might have a slight need for a bit of sugar every day and wouldn’t mind trying to break that habit.
Are you confused because I’ve been posting non-Whole30 recipes this month and well uh this all a bit ironic for a girl who just opened a Bake Shop to do?
I can tell you I haven’t been cheating, if I was this would be a very long 30 days! Secondly, what type of baker would I be if I was eating my products all the time? I jest but you get the point.
I could sit and promote the benefits of the program all day long, but I won’t. I will say though you get to eat things like this. Do you see the photo? Do you see that pork chop? Do you see the colorful relish of mango, tomatoes and avocado? Does it look like I’m suffering or starving?
Don’t worry, I’m still going to bring you sweet treats and fun libations. However, would it be so bad to have a couple of sugar/grain/dairy free things here once in a while? I didn’t think so. (Feel free to weigh in though on my Reader Survey if you haven’t, ahem hint hint 🙂 )
Ingredients
- 1lb bone-in, center cut pork chops (preferably antibiotic, hormone-free & grass-fed)
- 1 teaspoon kosher salt
- 1 teaspoon chili powder
- 1 teaspoon cumin powder
- 1/2 teaspoon smoked paprika
- 1/4 teaspoon cayenne pepper
- 1 mango, diced
- 1 avocado, diced
- 2 medium tomatoes or 1 large, cored, seeded and diced
- juice from 1 lime
- kosher salt
Instructions
- In a small bowl mix together the salt, chili powder, cumin, smoked paprika and cayenne pepper.
- Pat the pork chops down with paper towels and cut away any excess fat.
- Rub both sides of the pork chop with the spices and place on a parchment lined baking sheet.
- Place in a 400 degree heated oven and bake for 20-25 minutes depending on the thickness of your pork chop. You want the inside to come to 165 degrees. Remove, tent with foil and rest for 5 minutes.
- In a small bowl, combine the diced mango, avocado and tomatoes with lime juice and salt. Let sit for at least 5-10 minutes for the juices to release.
- Serve the pork chops with a healthy serving of relish on top of each one.
