I’m going to tell you a little story today about how a girl introduced a boy to a little known cut of steak many many years ago and how his life changed forever.
Once upon a time a girl met a boy and they went on a few dates. After a while she decided to invite him over to her apartment for dinner. Dating in New York City is expensive. Let me cook for you, she said. I’ll make you steak! Steak! Sure he replied and out he trekked from Brooklyn to Queens for a home cooked steak dinner.
He arrived while she was busy getting things ready in the kitchen and said I’m making skirt steak tonight.
Skirt steak? What cut is that?
Shocked by this question. The girl answered the one of the most flavorful cuts of beef (and inexpensive to boot she thought in her head) plus it cooks up really quickly.
They happily ate and the boy fell in love with this cut of beef. Oh and the girl too soon after.
Braden and I like to joke that it was my skills at cooking up a fine steak that sealed the deal on our relationship. What man could resist a perfectly cooked steak for dinner after all?
It’s funny to tell this story 10 years later, especially when I’m out shopping for our favorite cut that has grown in such popularity that it’s no longer as cheap as it used to be at the butcher counter. No matter the price, I still love to pick some up to make a quick weekday supper for the two of us.
Besides the versatility of skirt steak (enjoy it on its own, with eggs, topped with chimichurri, in tacos), it cooks up super quick. I’m talking 2-3 minutes max per side depending on the thickness of it. There is absolutely no excuse to get a good dinner on the table when this is part of your menu.
I’ve come a long way from how I used to originally prepare my skirt steak and a little seasoning plus a quick cook to toss in some tacos is my preferred method these days. Taco night should be simple but it doesn’t need to lack in taste. Get outside while you still can to roast those peppers on your grill or go my route to toss them under the broiler. Dinner will be on the table in 30 minutes.
Ingredients
- 1lb skirt steak, trimmed of excess fat
- 1/2 teaspoon ground cumin
- 1/2 teaspoon chili powder
- kosher salt and black pepper
- 3 assorted medium bell peppers of your choice
- corn tortillas
- optional: salsa verde and avocado on the side
Instructions
- Pat your steak dry with paper towels and season generously with salt and pepper. Sprinkle both sides with the cumin and chili powder. Let sit at room temperature for about 10 minutes.
- Roast your bell peppers either on a grill or under your broiler until they are charred on all sides and then quickly place in a zip top bag. Let steam for a few minutes before carefully removing the skin. Cut the stem and remove the seeds, and cut the peppers into 1/2 inch strips.
- Heat a cast iron skillet over medium to medium-high heat and drizzle a small amount of grapeseed oil.
- Sear your steak for 2-3 minutes per side and remove to rest with foil tented on top for 5 minutes.
- Cut the steak in 1/2 inch pieces across the grain.
- Char the tortillas on your stovetop in a dry skillet or directly over your burner.
- Place the steak and peppers on a platter and serve immediately with sliced avocado and salsa verde.

I love your date story. Everyone keeps telling me skirt steak is inexpensive but my grocery store seems to have it way overpriced. I’m always looking for it to go on sale. I’ll have to keep this recipe in mind. I love the look of it.
skirt steak used to be cheap but I actually find hangar steak to cost much less these days (and what I tend to buy more often). I think it’s become so popular now they’ve just raised the price on it.

We’re big beef eaters in this household. If I could, I’d serve it every single day. We like it that much. And, I totally agree, skirt steak is one the most flavorful cuts! Especially nice for tacos like these!
I, of course love ALL THE BEEFS; however, skirt is indeed my favorite cut. I love how quickly it cooks and how flavorful the meat really is. OK… I just drooled a lil’. Love these tacos!
