So it’s September, the start of fall, pumpkins, apples, hearty soups, slow-cooker meals and comfort food.  What am I doing posting an ice cream shake recipe? 

Because it’s still hot out and I’m not ready to give up my summer eats just yet.  That’s why, I tell you.  Plus doesn’t fall equal the opportunity to light up that fire pit in the backyard and continue the summer s’more eating? 

Yes, that’s what I thought. It doesn’t matter the time of year, it’s always s’more time. 

Plus I had to share this skipped ice cream week recipe before the opportunity really passed me.  I might like to eat ice cream in the dead of winter, but do you?

Truthfully though, can you think of a better combination than peanut butter cups, vanilla ice cream, crushed graham crackers and freshly roasted marshmallows?  

This whole concoction came together thanks to my sister-in-laws boyfriend, when we were visiting them out west back in June I insisted on lighting the fire pit.  I mean, this city girl doesn’t get those opportunities often.  Breaking out the torch for some roasted marshmallows is fun and all but there’s something about sitting around the fire, smelling the wood burn and getting those ‘mallows nice and charred.  

Right, so general s’more making is standard stuff but as we were running out to the store my SIL’s boyfriend made a comment about peanut butter cups replacing the chocolate squares in your s’more. 

Can you say mind blown? Why haven’t I done this before? 

Of course I came back with a back of peanut butter cups and more than my fair share of s’mores later, I knew this would make one awesome ice cream shake.

Peanut Butter Cup S'more Milkshake
Save Recipe

Ingredients

  • 1 pint good quality vanilla ice cream
  • 1/4 cup peanut butter
  • 4 peanut butter cups
  • 2 tablespoons crushed graham crackers (about 2-3 whole crackers)
  • 2 toasted marshmallows

Instructions

  1. Place the vanilla ice cream, peanut butter, peanut butter cups and graham crackers in a blender and blend until smooth.Toast your marshmallows using a chef torch, on your stove top or your broiler (watch them carefully!).Divide the milkshake between two glasses and top each with a toasted marshmallow.Serve immediately.

    Girl, I eat ice cream all year round too. It’s the best way to live 😉 Your SIL’s boyfriend is a genius. Slapping a PB cup into a s’mores sounds freaking delicious. I love that you turned it into a milkshake. These photos are fantastic, especially the one with the marshmallow still on fire.
