Summer is coming and with rising temperatures, long work days, and a lessening desire to stand in front of anything that can be turned on to 500 degrees getting me to make dinner during the next few months can be quite the battle.
The thing is I need to feed myself and I suppose I should feed my husband too, plus we have the unending rotation of produce coming in from the summer CSA share. Something needs to be done with it all but that something needs to involve not turning on the oven.
The most obvious choice to is step outside, fire up the grill and enjoy the fresh air and summer breeze.
My option? Break out the grill pan and make sandwiches.
Since sandwiches are happening frequently for dinner in the Little Red Kitchen during the summer I like to make sure we are fully stocked in the bread department. Like I said, I’m not turning on the heat pit called the oven to make my own so instead it’s hitting the store for good, restaurant quality breads and rolls.
I recently discovered Cobblestone Bread Co. and their fabulous assortment of gourmet breads such as their Toasted Onion Roll and Wheat Grinder Sub. I like a roll that’s soft and can handle a big sandwich but still toasts up nicely on the grill and the rolls from Cobblestone Bread Co. do just that.
With bread in hand, grill pan (or hopefully in your case the actual grill) ready to go it’s sandwich making time!
I’m basically obsessed with all things Italian flavored, you can probably see that influence since we returned from our to Italy. I love using burrata cheese as much as possible and in this sandwich you don’t need any dressing or sauce because the cream from the burrata does the job for you. A few slices of Prosciutto di Parma gives it enough heft to fill you for dinner and the grilled zucchini helps trim down on the piles currently growing in your garden.
Ingredients
- 1 medium zucchini
- 1 tablespoon canola or grapeseed oil
- kosher salt and black pepper
- 4 ounces Prosciutto di Parma
- 2 4oz balls burrata cheese or 1 8oz ball cut in half
- 2 kaiser rolls - such as Cobblestone Bread Co. Toasted Onion Roll or Cracked Wheat Kaiser Roll
Instructions
- Slice the zucchini lengthwise into 1/4 inch planks and brush both sides with canola or grapeseed oil. Season with salt and pepper.
- Grill the zucchini for 2-3 minutes or until it begins to soften slightly and has some nice char marks on it.
- Slice the zucchini in half and divid between the two rolls.
- Place 2 ounces of prosciutto on each roll and top with 4 ounces of burrata.
- Serve immediately.

I’ve officially had this sandwich on my mind for two days now! I’m obsessed with it! Burrata is such a summer flavor for me, mostly because, like you, I really enjoy dinners I can pull together without the oven. So sometimes, that means a big cutting board with a ball of burrata, a pile of prosciutto, some bread, and maybe some type of grilled or pickled veggies. You took my lazy man’s summer dinner and turned it into a sammie!
