Do you ever get an idea in your head and think this is either going to work really well or be a total failure?
Well that is essentially the cookies you are looking at today.
Remember the fabulous Chocolate Peanut Butter Day celebration back in March? Sure you do, I made these awesome Dark Chocolate Peanut Butter Mousse Cups. Anyhoo, during my brainstorming sessions on what to make, somewhere in my warped mind I had decided that chocolate sandwich cookies with a raw, egg-less peanut butter cookie dough filling would be really awesome.
I shoved it away for a rainy day or special occasion, whichever came first. Seeing that yesterday was the 3 year celebration of this little blog here that special occasion came first.
Guys. These cookies. These cookies are sick but sick in a give me a tall glass of milk, bourbon on the rocks, coffee with cream and sugar because I’m going to eat them all kind of sick. Sick as in I live in Brooklyn and sometimes we use it to define something as “crazy, cool, insane” or at least that’s what Urban Dictionary tells me because I don’t really talk like that. 🙂
These are the be all to end all cookies. These are the cookies for every chocolate and peanut butter lover out there. These are the cookies for the people who like to eat the cookie dough.
If I could ship raw dough – even the egg-free kind, you’d be getting these cookies in my bake shop.
These are the cookies that are perfect to kick-off the next year of blog life.
It’s hard to believe that 3 years have passed by. Yeah, everyone says that during their blog anniversary but seriously how did we get from 2011 to 2014 so quickly?
Looking back at my archives it’s amazing to see how I’ve evolved. For the first six months most of my posts talk about kitchen renovations and what I had my CSA share for that week. Who wants to read about that? What was I thinking?
Yet eventually I found my voice, my passion and my calling and you’ve come back each day which helps keep me going.
I’ve had so many amazing opportunities come my way in the last 3 years and met and made the most wonderful friends. The food blogging community is full of passionate and talented people and I’m proud to be a part of that.
Did I think three years ago at this time I’d be launching a bakery and making giant steps towards my future? Most definitely not but I’m excited and ready.
Ingredients
- 2 cups unbleached all-purpose flour
- 1/2 cup dutch process cocoa powder
- 1 teaspoon salt
- 1/2 teaspoon baking powder
- 1/4 teaspoon baking soda
- 1 cup (2 sticks) unsalted butter, room temperature
- 1 1/4 cups dark brown sugar
- 1/2 cup granulated white sugar
- 1 large egg + 1 egg yolk, room temperature
- 1 teaspoon vanilla bean paste or pure vanilla extract
- 1 cup semi-sweet chocolate chips
- 2 cups unbleached all-purpose flour
- 1 cup dark brown sugar
- 1/2 teaspoon salt
- 1/2 cup granulated white sugar
- 1/2 cup natural-style peanut butter
- 10 tablespoons unsalted butter, melted
- 1 teaspoon vanilla bean paste or vanilla extract
- 1/4 cup whole milk
- 1 cup semi-sweet chocolate chips
Instructions
- Heat your oven to 350 degrees, line baking sheets with parchment paper.
- In a medium bowl combine the flour, cocoa powder, salt, baking powder and baking soda.
- In the bowl of your stand mixer fitted with the paddle attachment cream the butter and sugars for about 1 minute and then add the egg and egg yolk one at a time. Mix in the vanilla bean paste.
- Scrape down the sides of the bowl and in two parts mix in the flour mixture, making sure not to over mix the dough.
- Lastly stir in the chocolate chips making sure to scrap the bottoms and side of the so that everything is combined.
- Using a cookie scoop, scoop onto the prepared baking sheets and bake for 8 minutes.
- Cool completely on a cooling rack.
- While the cookies are cooking in a medium mixing bowl combine all the ingredients except the milk. Add the milk and stir until the cookie dough is soft and scoop-able. If it seems a little dry add more milk 1 tablespoon at a time. The texture of the cookie dough is a little crumbly.
- Carefully place 1 to 1/2 tablespoons of cookie dough on a cookie and sandwich it with another one.
- Serve immediately or store in the refrigerator for 1-2 days.
Notes
There will be more cookie dough than cookies to fill. You can use the extra cookie dough to make cookie dough truffles or roll them into little balls and freeze to mix into homemade ice cream.
Of course despite being an anniversary celebration we still need a kickstarter update! We had a great weekend breaking the $5K mark! It’s just a short ride to the finish line from here with 16 days left to go. Doesn’t mean it’s time to rest, let’s keep sharing and pledging if you can! Plus you never know, I might figure out a way to add a cookie similar to this one to the store. 🙂
Happy Anniversary! Just look how far you’ve come!!! Terrific cookies!

Happy anniversary! Celebrating with these cookies is perfect! Because they are insane. I’d eat all of them in one sitting.

Wahoo!!! You hit $5000?! That’s amazing! You’re amazing. These cookies are amazing. I love that we started our blogs almost at the same time (just a day and a year separate us, lol). I would totally come here to listen to you talk about CSAs and kitchen renos! I’d listen to you talk about anything because you have a wonderful, witty, honest, thoughtful, all around fabulous voice. And you make ridiculously SICK (as in the urban dictionary definition) treats like these double chocolate peanut butter cookie dough sandwiches. Happy third year blogiversary, my friend. I’m looking forward to many many many more!
Congratulations on your 3 year blogiversary! And wow what a cookie to celebrate with. My mouth really is watering just looking at them. Best wishes to you on the bake shop and all your endeavors.

I want to OM NOM NOM THEM ALLLLLLL!
Cookie dough and cookies? I die!
Happy 3-year blogoversary, Susan! And I, for one, think CSA shares are pretty interesting 😉 But maybe that’s because in the days before I was an official blogger, I sort of “photo blogged” my CSA shares every week. But yeah, probably nobody was interested in them other than my mom and my one friend who would sometimes pick up my share for me if I couldn’t. haha.
Oh how I wish these COULD somehow be a part of your online bakery! I would order them in a heartbeat. And then wait by the front door until they arrived. No, seriously.

Nothing goes better together than chocolate and peanut butter- I’m in love!
I’m confused by the term ‘extra cookie dough’ but you can explain it to me when you’re handing me a big plate of these cookies for my birthday next month. 😉
I think your brain is a genius! I LOVE that the filling is cookie dough!
I wish that I had some of these! I love that flavor combo!
Happy blog anniversary! Peanut butter and chocolate is my favorite flavor combination! I’m definitely making these cookies soon!
Happy 3 years!! No matter whether it’s 1 year, 3 years, or even 7 years, it’s amazing how much we bloggers evolve. I can’t wait to see what you accomplish this upcoming year! And oh my I really really wish you were delivering these this weekend 😉
Oh yes! Yes yes yes! Happy Blogversary, Susan!
