New York City is an interesting place. For many reasons but I think one of the biggest ones is because it’s probably one of the few places you can “know” someone without actually really knowing someone.  

Confused? Let me explain.  I have the perfect example. 

Exhibit A) Allison Kave the extremely talented pie maker, author of First Prize Pies, the woman whos recipe I’m sharing with you today, and co-owner of soon to open dessert and craft cocktail bar Butter & Scotch in Brooklyn. 

Exhibit B) Me. 

Allison and I never officially met. We were both at the Pie Party last year but there were so many people there it was hard to say hello to everyone.  We were both at the opening of her mom’s shop Roni-Sue’s Chocolate but you know kind of a big family night.  Lastly Allison went to high school with one of my dearest friends and co-workers.  Oh and we are both Long Island turned Brooklyn gals. Small world huh? So you can understand why I feel like I know her but I don’t actually.

So once I heard that her book First Prize Pies was coming out, I knew I needed to get a copy of it! I love pie but I’m not the best pie maker in the world.  Pastry crust and I don’t exactly have the best relationship and what better time to get some expert help than on pi(e) day?

First off, if you don’t have a copy of the book, run don’t walk to get it (or click my affiliate link above for to buy it).  I haven’t fallen for a cookbook this hard in a long time.  This is a book for the novice baker to the most expert pie maker.  There is something for everyone in here.

Allison starts with your basics – she sets up your pie making kitchen with definitions on everything to expect throughout the book.  Next up step by step photos on how to roll your pie crust and make a lattice crust. Two of the most import elements in pie.   From there we move on to other types of crusts to reference back at throughout the book. 

Now I thought the photos of the pie dough was my favorite until I reached the actual recipes. We are clearly kindred spirits,  Allison is baking by season and by month.  Want to bake a pie in June with strawberries? There are recipes for that. Apple recipes in October? You bet.  However it is just plain old apple pie, these recipes are inventive and thought provoking.  You might take a step back at first and then say ‘yes, yes this is going to be awesome.’

I was a little torn on what pie I wanted to try first so I let the decision go to Braden. I gave him three options from March and April and as you can clearly see the Avocado Cream Pie was his choice.  Of course at the time, I didn’t realize hey it’s the perfect pie to celebrate St. Patrick’s Day too. Naturally green! 

Neither of us knew what to expect from an avocado pie but my oh my it was incredible! Almost a bit like key lime but you still get that sweet, creamy avocado taste.   Trust me on this one, you want to make this pie.  Plus every other one in First Prize Pies.

Save Recipe

Ingredients

    Graham Cracker Crust:
  • 1 1/2 cups finely ground graham crackers
  • 8 tablespoons unsalted butter, melted
  • Filling:
  • 4 medium Haas avocados, fully ripe
  • 8oz cream cheese, room temperature
  • 1 14oz can sweetened condensed milk (make sure ingredients read just milk and sugar)
  • 1/2 cup fresh lime juice
  • 1/4 teaspoon salt
  • Topping:
  • 1 cup heavy cream
  • 2 tablespoons powdered sugar
  • 1 teaspoon vanilla extract

Instructions

  1. Heat the oven to 350 degrees F.
  2. Pour butter into the ground graham crackers and mix until the butter is fully incorporated and the texture is that of wet sand.
  3. Firmly press the crumbs against the sides of a 9-inch pie pan and then against the bottom of the pan. Chill the crust for at least 15 minutes to help prevent it from crumbling when serving.
  4. Bake the crust for 10 minutes, or until fragrant. Remove it and allow to cool before filling.
  5. Halve and pit the avocados, scoop out the flesh into the bowl of a stand mixer or a large bowl. Beat the avocado with the cream cheese until smooth.
  6. Add in the milk, juice and salt and beat until fluffy (this can also be done in a blender).
  7. Pour the filling into the cooled crust, cover with plastic wrap (allow the plastic to touch the surface of the filling), and refrigerate it until the filling is fully set, at least 4 hours.
  8. In a stand mixer, with a hand mixer or by hand with a whisk, whip the cream with the sugar and vanilla until stiff peaks form.
  9. Pipe or spread the whipped cream over the pie filling.
  10. Slice and serve.
  11. This pie needs to be served the day it is made, as the avocado filling will oxidize and turn brown if exposed to air for too long.

    OK, if I ever come to NY you and I must go to this dessert and cocktail place! It sounds like the best idea ever!! I like the looks of this pie! I have only ever used avocado in frosting on brownies so I am intrigued by this pie!

      Okay, so when Andy is old enough you absolutely need to come visit (and stay with me) for a girls weekend so we can have all the bourbon and sweets we want.
