Waffle Iron Reuben Sandwiches Ooooh boy, I have a fun surprise for someone reading out there today. Hey Stefanie – yeah you Stefanie from Sarcastic Cooking, my pug loving, bourbon swilling (but not right now), Halloween hating, bad TV (but really they are good shows) watching friend this is your virtual Baby Shower!  Your sweet friend Stephie, has gathered a bunch of us together to celebrate you today and we have such an amazing, delicious menu planned that I don’t know if you’ll want to wait until that precious baby is born to get cooking! 

Baby shower graphic Waffle Iron Reuben Sandwiches I must confess, I was a little lost on what to make today.  For you see, I’ve never been to a baby shower before! We Jews generally don’t do the shower thing, we can be a superstitious lot and always celebrate after the baby is born.  Stephie had the genius idea of making something that we’d traditionally serve at a bris or baby naming but I don’t know how much any of you would like to see a plate of bagels and lox! 

Then one day as I was reading Stefanie’s blog, she posted a recipe for homemade rye bread and went on about her love for it.  That’s when it clicked, time to take something jewish (i.e. deli meat) and something Stefanie loves (rye bread) and have a little fun with it! 

Waffle Iron Reuben Sandwiches Hence the Waffle Iron Reuben was born! These are great for parties, you can prepare all the sandwiches ahead of time and then grill them up in your waffle iron right before you serve. Since your iron heats from above and below, they cook up quick, crisp and all the melty cheese ends up in the nooks and crannies from the impressions of the waffle iron.  Cut those sandwiches into quarters and you are good to go!

Ingredients

  • 1 tablespoon unsalted butter, softened
  • 4 slices rye bread
  • 1/2 lb sliced corned beef
  • 1/2 lb sliced swiss cheese
  • 1/2 cup sauerkraut
  • mustard or russian dressing (choice is yours)

Instructions

  1. Slather each of the bread slices with butter and turn over so the butter side of the bread is down when building the sandwich.
  2. Spread the inside of the bread with either whole grain mustard or russian dressing, whatever you prefer on your sandwich.
  3. Lay 2 slices of swiss cheese down, then 2 slices of corned beef.
  4. Next place 1/4 cup of the sauerkraut in the center in the sandwich and top with another 2 slices of corned beef and 2 slices of swiss cheese. Top with the rye bread, butter side out.
  5. Repeat with remaining bread and cheese/meat/sauerkraut.
  6. Place in your heated waffle iron, press down and cook for 3-4 minutes or until the outside is browned and crispy and the cheese has completely melted.
  7. Carefully remove from the waffle iron and cut into quarters.
  8. Serve immediately.

    YES, yes, and yes! I’ve never had a waffle sandwich and reubens are one of my faves! I wasn’t sure what to bring to the shower either (not much experience with the shower thing, myself), but you totally hit a home run with these! So happy to meet you through Stef’s baby shower!! 🙂

    Oh Susan! You are so sweet! My family is not Jewish but I totally get you on the superstitious thing. My mom is sooooooo superstitious, actually annoyingly so. I am so into these little guys. I love rye bread, duh! I also love reubens. And pickles on the side of course! What a smart way to get more use out of your waffle iron, this is why i love you!

      Yeah! I’m so happy you love reubens! Oh I bet your mom is being superstitious with this being your first baby! You’re almost there, I think you can keep her at bay for just a few more weeks. 🙂

    When we lived in Africa we always had a toasted sandwich machine which looks like a waffle maker but usually with the ribs. I had never thought to use the waffle machine. Great idea. Those sandwiches look delicious!!

    These are GENIUS!! Omg, I don’t have a panini press but this is SO MUCH BETTER. I would totally serve these at a baby shower, but then again, I’m weird.
