This brainchild of mine has been in the planning stages for so long now and to see it finally here  just brings a huge smile to my face.  Who doesn’t love cookies? Seriously, who doesn’t? I will never and I mean never turn down a cookie.  If you presented every single type of dessert in front of me, I will pick the cookie. Hands down. Every time. No questions asked.  Even better if there is ice cream in that cookie. 

Think I’m kidding about my cookie love? Yours truly is the reigning champ of the Brooklyn Cookie Takedown for the last two years, I know my way around cookies.  So with that in mind, let’s get this party started and don’t forget to stick around to read all about our amazing  giveaway. 

Chocolate Peanut Butter Pie Cookie Cups #cookieweek While cookies are my first choice at the dessert table, maybe they aren’t yours. So what do you do when you are faced with the decision between pie and a cookie? Today that problem has been solved with Chocolate Peanut Butter Pie Cookie Cups.  For you see I’ve taken the portability of a cookie and filled it with, in my opinion, the best pie filling out there, peanut butter.   It’s the ultimate combination dessert and you can have more than one without feeling guilty.  Win – win situation.

Chocolate Peanut Butter Pie Cookie Cups #cookieweek + a gigantic #giveaway!

Ingredients

    For the cookie cup
  • 2 cups unbleached all-purpose flour
  • 1 cup cocoa powder
  • 1/4 teaspoon salt
  • 1 cup unsalted butter ( 2 sticks), room temperature
  • 3/4 cup pure cane sugar
  • 1 large egg + 1 large egg yolk, room temperature
  • 1 teaspoon pure vanilla extract
  • For the filling:
  • 1/2 cup natural style peanut butter (no added sugar)
  • 2 tablespoons powdered sugar

Instructions

  1. Heat your oven to 350 degrees and spray a 24 cup mini muffin pan with non-stick spray.
  2. In a medium bowl, combine the flour, cocoa powder and salt.
  3. In the bowl of your stand mixer, fitted with the paddle attachment or using a hand mixer cream the butter and sugar until light and airy about 2-3 minutes.
  4. Beat in the eggs, one at a until until combined and then the vanilla extract.
  5. Scrape down the sides of the bowl and beat in the flour in two parts, careful not to over mix.
  6. Take about a golf ball sized amount of dough in your hand (it's about 1 1/2 to 2 tablespoon worth) and roll into a ball. Place it into one of the cups of the mini muffin pan. Proceed with the remaining dough, it should portion out to 24 dough balls.
  7. Gentle press the dough down into the pan with your thumb and bake for 10 ten minutes.
  8. Once finished baking, remove from the oven and let sit for a minute or two, then with a small spoon or the back end of a wooden spoon press into the cookie cups to make an indent about 1/4 of the way down. Let cool completely in the pan on a wire rack.
  9. While the cookie cups are cooling, clean out your mixer bowl and add the peanut butter and powdered sugar. Beat until smooth and slightly whipped, about 2-3 minutes. Transfer to a pipping bag, fitted with a tip of your choice.
  10. Pop the cookie cups out of the pan and proceed to fill with the peanut butter filling.
  11. Store in an airtight container for up to one week.

    These chocolate peanut butter pie cookie cups are going into the cookie exchange this year. My traditional exchange cookies are always cutouts and potato chip cookies. The potato chip cookies are so light and airy. A family favorite!!

    OMG. First off beautiful pictures!! Second, I love the combination of PB and chocolate. These totally remind me of brownie bites. I used to love those when I was a little kid. My fave cookie to share around the holidays is either a chocolate chip cookie or marshmallow candy cane cookie.

    My grandmother baked up a storm and they were all delicious but I was really fond of Christmas meringue cookies and something Scandinavian that involved dipping a device that looked like a fancy branding iron into a batter and then into a deep fryer, then dusting the cookie with powdered sugar. I think they’re called Rosettes.
