Chocolate Dipped Potato Chip Rice Krispie Treats #SundaySupper I have a thing for crunchy foods. Except in my world, they are referred to as crispities. You know the little crispy bits of french fries at the bottom of the pile or bits and pieces of fried chicken crust that fell off after frying.  Those things, I love them; crunchy, flavorful and when you are in my presence, all mine!

Crunchy goodness, a celebration of all the good crunchy things in life.  Because let us be honest, do you really want to eat soggy cereal or overcooked vegetables? No! You want the crunch! Plus what is your morning yogurt without a little granola on top? Boring. How about a cocktail party with out some nuts? You need something to nibble on while you imbibe.  

Chocolate Dipped Potato Chip Rice Krispie Treats #SundaySupper Chocolate Dipped Potato Chip Rice Krispie Treats #SundaySupper I think it is pretty easy to go crunchy with entrees or snacks, so I wanted to have some fun with dessert. I remember the first time I ever had a chocolate covered potato chip.  I must have been 8 or 9 years old at my Aunt and Uncle’s annual holiday party.  My aunt always put out the most incredible spread of food and that year she had some chocolate covered potato chips.  Not a kid to say no to chocolate or chips, I had to try it.  I was in love, the salt, the crunch!  It just made sense to combine that with some rice krispie treats.  After all, who didn’t sit and listen to their cereal make the snap, crackle and pop sounds? 

Chocolate Dipped Potato Chip Rice Krispie Treats are perfect for parties, bake sales or just when you need a little sweet, salty and chocolate fix.  Have fun with these.  I broke out the cookie cutters for a few of them and the sprinkles can customize it for any season.   As a huge Breaking Bad fan, I couldn’t resist a little blue in honor of their series finale tonight.

Save Recipe

Ingredients

  • 6 tablespoons unsalted butter
  • 15 oz mini marshmallows
  • 6 cups puff rice cereal (such as Rice Krispies)
  • 5oz kettle cooked potato chips, slightly crushed
  • 6oz semi-sweet chocolate
  • 2 teaspoon vegetable oil
  • optional: sprinkles for decoration

Instructions

  1. Grease a 9X13 baking dish with non-stick pray and place 1 1/2 cups of crushed potato chips on the bottom.
  2. In a medium saucepan over medium low heat, melt the butter and marshmallows until smooth.
  3. Stir in half the rice krispies, then the remaining potatoes chips and finally the rest of the rice krispies. Make sure everything is evening coated with the melted marshmallow.
  4. Pour the mixture into the prepared baking dish and press down and out with your hands or a wooden spoon so it reaches the edges and is flat on top.
  5. Let the krispie treats cool and set up (this can be made 1 day ahead of time and keep in the refrigerator to set).
  6. If you refrigerator your krispie treats, bring to room temperature and cut into squares or shapes with cookie cutters.
  7. In a double boiler, melt the chocolate until smooth and stir in the vegetable oil.
  8. Line a baking sheet with parchment paper and half the rice krispie treat in chocolate and set on the baking sheet. Top with sprinkles if using.
  9. Transfer to the freezer for 5-10 minutes to let the chocolate harden, remove and store in an airtight container for 3-4 days.

    So I’m not the only one that goes for those crispities at the bottom of the fries or the battered and fried food….
    Nice way to incorporate a touch of salty in the very sweet of a rice krispie treat. Even better to dip it in chocolate. Yum!

    What a great idea! In a recent conversation, someone mentioned dipping Doritos in Blue Bell vanilla ice cream. It sounded strange at first, but the sweet and salt combination is one that many favor. Salted caramel chocolate (same idea) is so popular now too.

    WOW! I need to start dipping potato chips into melted chocolate, like yesterday. These are incredible, Susan, and you’re incredible for dreaming them up. I love the homage to Breaking Bad too. I cancelled all my specialty cable channels six months ago for Netflix so we don’t have AMC anymore. I’ve been dying to watch this last season. We might ignore our cheapo tendencies and just buy the series on ITunes. I haven’t read a single spoiler and I hope it stays that way until I can binge watch!
