I am so excited for #IceCreamWeek! If you are an ice cream lover like I am, then I suggest sticking around all week long – we have some amazing recipes coming your way!  I thought I’d start you off with the easiest of my three recipes – a little childhood throwback if you will.

Dark Chocolate Fudge Pops #icecreamweek Do you remember the Jell-O Pudding Pops commercials with Bill Cosby? It’s the first thing I associate when I think of fudge pops and the second is when we used to get fudge pops for our end of day ice cream snack at camp.   I remember liking fudge pops – but let’s be honest they weren’t very chocolatey.   These dark chocolate fudge pops are basically hot chocolate on a stick.  It’s the perfect balance of chocolate flavor with creamy ice cream goodness.  Oh and it takes no time to make, after trying these you’ll ever wonder why you bought fudge pops before!

Dark Chocolate Fudge Pops #IceCreamWeek
Save Recipe

Ingredients

  • 6oz bittersweet chocolate (no more than 60% cacao)
  • 2/3 cup cane sugar
  • 1 1/2 cups whole milk
  • 1 cup heavy cream
  • 2 tablespoons cocoa powder
  • 2 tablespoons corn starch
  • 1/4 teaspoon salt

Instructions

  1. In a medium saucepan over medium heat combine the bittersweet chocolate, sugar, whole milk, heavy cream and cocoa powder.
  2. Once the chocolate is completely melted, stir in the corn starch and salt.
  3. Cook for an additional minute or two until the mixture is thickened - do not bring to a boil.
  4. Transfer to a mixing bowl and chill in the refrigerator for an hour.
  5. Pour into popsicle molds and freeze for 4 hours or overnight.
  6. Makes 8 3oz fudge pops.

    My kids would go ga-ga over those fudge pops. I bought a bunch of popsicle molds at the beginning of summer but haven’t gotten around to making anything with them. This would be a perfect way to inaugurate them!

    I’ve just discovered the amazingness of popsicles this summer, but have yet to do chocolate. I’m really not sure how that happened. But now I will most definitely be making up for that oversight with these, these are so gorgeous and delicious!! I can’t wait to try!

    Fudgsicles were my favourite frozen treat as a kid and boy, have you elevated them to the next level here! Sigh…I remember seeing those Bill Cosby commercials on tv eons ago. It makes me feel old thinking about how long ago that was! Susan, your photos are ridiculously beautiful. I love the dark background and those melting pops.
