I have a problem. When a candy heavy holiday passes, I get this overwhelming urge to run out to the store to buy all the half price candy.
I know I’m not the only one. Stop backing away from your computer screen, I know you do it too.
The problem is Easter, it is my true guilty pleasure, all the best candy comes out then. Reese’s eggs, Snickers eggs, Butterfinger Eggs, M&M’s in ever flavor they make in pretty spring colors.
Clearly, what you’ve gathered from my problem is that I like the good stuff and things that include peanut butter and/or peanuts. C-Day arrived (that’s candy day, yo) and I hit the Duane Reade right before work and lucky me scored some nice bags of M&M’s! It completely justified making some peanut butter bars, as those M&M’s need a vessel, other than being popped into my mouth!
These bars are for all peanut butter lovers – these are chewy, with the perfect stick to the roof of your mouth peanut butter effect. I bet you can’t just have one!
Ingredients
- 1 1/2 sticks (3/4 cup) unsalted butter, melted and cooled
- 1 cup light brown sugar, packed
- 1/2 cup granulated white sugar
- 2 large eggs, room temperature
- 1 teaspoon pure vanilla extract
- 3/4 cup creamy peanut butter
- 1 1/2 cups all-purpose flour
- 1 teaspoon baking powder
- 1/2 teaspoon salt
- 1 cup peanut M&M's
Instructions
- Pre-heat your oven to 350 degrees F and line a 8X8 baking baking with parchment paper.
- In a medium bowl, mix together the melted butter, sugars, eggs, vanilla extract and peanut butter until well combined.
- In a small bowl, combine the flour, baking powder and salt. Stir the flour mixture into the wet ingredients, careful not to over mix.
- Lastly, stir in the peanut M&M's making sure all the ingredients are fully combined.
- Pour the batter into the prepared baking dish and spread evenly with a spatula.
- Bake for 20-25 minutes or until a toothpick inserted comes out clean. The edges should be golden brown and slightly crispy.
- Let cool completely before removing.
- Store in an airtight container for up to one week.
I’m guilty of loading up on the clearance holiday candy too. I can’t help myself. Oh and have I mentioned how much I love peanut butter? These bars are just right for me. Yum!
I do too! I missed out this year though, the candy selection was bare bones by the time I got there. And the Cadbury eggs never last long…
The only thing I feel compelled to hoard is Cadbury Cream Eggs but it’s a pretty serious hoarding problem. 🙂 Other than that, peanut butter is my thing!! 🙂
i totally hoard the marked down candy as well – it would be silly of me to turn down a deal on one of my potty training bribes, er… i mean, positive reinforcement techniques.

C-day is the best day! I’m such a sucker for holiday candy, especially when they hit the clearance bin. Best ever! And hells yeah to these peanut butter bars – PB cookies are one of my favourites.
