Kale Salad with Pomegranates, Apples and Walnuts

Let’s be honest, who overdid it on Valentine’s Day?  Too much chocolate? Or did you wait until the day after for the half price chocolate at the store? 

Come on, don’t be shy, you can tell the truth to me. 🙂 

Ready for a little detox until St. Patty’s day?  You have a good solid 4 weeks of clean eating until it’s time to go a little wild again and #SundaySupper is going to help you out!

It’s time to get skinny with recipes! Some contributors have lightened up their favorite meals and I’ve whipped up my newest obsession kale salads!

Kale Salad with Pomegranates, Apples and Walnuts

Kale has been my go to green in my salads in the last few months and truth be told, I think I prefer it better raw than cooked.  We all know kale’s nutritional benefits, I’m not going to bore you with that again, but the slightly bitter kale paired with different fruits is a lovely change from a traditional green salad.

Ingredients

    For the salad:
  • 1 bunch kale (such as Tuscan or baby kale), tough stems removed, finely chopped
  • 1/2 cup pomegranate seeds
  • 1/2 gala apple, thinly sliced
  • 1/3 cup walnuts, toasted
  • For the dressing:
  • 1/4 teaspoon dijon mustard
  • 1 tablespoon balsamic vinegar
  • 3-4 tablespoons extra virgin olive oil
  • 1/8 teaspoon kosher salt
  • 1/8 teaspoon black pepper

Instructions

  1. In a large bowl, toss together the chopped kale, pomegranate seeds, apple slices and walnuts.
  2. In a small bowl, whisk together the dijon mustard and balsamic vinegar. While whisking drizzle in the extra virgin olive oil, stopping at 3 tablespoons, if it seems a little thick, add the extra tablespoons. Season with salt and pepper.
  3. Toss the salad with the dressing right before serving.

    I’m kind of embarrassed to admit that while I love kale, I’ve never eaten it raw. Time to rectify that and I will start with your lovely salad. What a great combination of ingredients and the dijon/balsamic dressing sounds delicious!

    I would definitely prefer this kale salad to the regular ol’ bag of greens. The dressing sounds lovely and I adore fruit in salads. I’m trying to get the Husband to come around to liking kale but i’m having a hard go at it. Maybe this recipe would change his mind!

    I’ve been struggling with the bitter kale but keeping it raw and adding the fruit is a great idea! And, if I eat this, it will negate that extra large box of Godiva Brian got me that is still very much around. Right??
